Mid-December belated fall recipe list with mini report card

Mylotter friends, here’s my belated Mediterranean diet breakfast recipe list with a mini report card for my two-part list for October and November. Sorry so late for delivering these posts to you. I’ll do this month’s tomorrow and work on my supper lists of you by Christmas and before New Year’s Day, which is two weeks from tomorrow, away. Enjoy! I’ll stop by tomorrow afternoon to check up posts and comments on the past few weeks. 1.. The Last Avocado Toast Recipe Ever You’ll Need (Eatingwell.com): This is a quick and easy way to make avocado toast in less than 10 minutes. Perfect breakfast to eat on the go with one slice of toast. Grade: A. Leftovers: None. 2.Peanut Butter Banana English Muffins (Eatingwell.com): This is another quickie breakfast on the go recipe that requires bananas, peanut butter, ground cinnamon, and English muffins. What a better way to start the day. Grade: A. Leftovers: None. 3. Kaginas: Greek Scrambled Eggs with Cherry Tomatoes and Feta (Olivetomato.com): This breakfast recipe requires eggs, cherry tomatoes, feta, and olive oil. And it takes less time than 20 minutes to make this scrumptious dish. Grade: A-. Leftovers: None. 4. Eggs and Greens Breakfast Dish (All Recipes): This is a simple breakfast dish that requires rainbow chard, eggs, shredded cheddar, arugula, and spinach. It takes less than 15 minutes to make. Grade: A. Leftovers: None. 5. Mediterranean Breakfast Quinoa (All Recipes): This was a simple and delicious breakfast dish that can be made in less than 20 minutes with quinoa, dates, dried apricots, nuts, and cinnamon. It came out so good and tasted so delicious. Grade: A+. Leftovers: None. 6. Sweet Potato Breakfast Hash (Downshiftology): This breakfast is made in one skillet from start to finish. Sweet potatoes, eggs, bacon, kale, and other key ingredients made this a delicious meal. And it’s ready for you in less than a half-hour. Grade: A+. Leftovers: None. 7. Three-way Breakfast Egg Muffins (Downshiftology): A+. This was one of my favorite fall breakfast recipes I made for breakfast-on-the-go. Three different flavor combinations like sausage and kale, Parmesan and basil, and so on. The possibilities were endless. Grade: A+. Leftovers: Yes, I made a batch of 9 and had enough for two weeks, one muffin per day. 8. Spinach, Feta, and Egg Breakfast Wraps (The Kitchn): These wraps are freezer-friendly and perfect for a breakfast meal on the go. In less than 20 minutes, you need spinach, eggs, cherry tomatoes, feta, and whole wheat tortillas to wrap them in. Grade: A+. Leftovers: None. 9. Spinach and Egg Scramble with Raspberries (Eatingwell.com): This breakfast dish is relatively easy to make by scrambling eggs. You need to add canola oil, baby spinach, and add fresh raspberries with whole wheat toast in the end. Grade: A-. Leftovers: None. 10. Egg White Frittata with Smoked Salmon (TheMediterreaneandish). This is a simple frittata dish made with egg whites and added smoked salmon pieces. It takes less than 15 minutes to make it fresh from the stove. My frittata was edible, but it didn’t rise to the occasion like frittatas should be. Grade: B-. Leftovers: None. 11. Feta and Spinach Frittata (TheMediterraneandish): This is another simple frittata to make with eggs. You just need to add feta and spinach. This came out better than the egg white one, though it turned out flat though. Practice does make perfect for both of them. Grade: B-. Leftovers: None. I think I would enjoy numbers 1, 4, and 9 though I would not add the raspberries as I do not like them.

Maybe strawberries instead? I know for a while there were lots of fast food places that did spinach salad with strawberries.

@GardenGerty I love strawberries but don't like having fruit in a salad, unless it is a fruit salad. Mike would probably like that as he does like fruit in his salads.
