And more baking

Since I had the oven on to bake the banana bread, I thought I would be energy-efficient and do some more baking at the same time. Then I could pop some of the results in the freezer for another time, when I don’t have the opportunity to do any baking. I didn’t want to go shopping so I just used what I had in the cupboard and freezer. I dug out an old book on baking that I picked up when I lived in the US, which has a selection of ‘coffee cake’ recipes. When I first got this I was confused, since most of the coffee cake recipes didn’t include any coffee! Nevertheless I used it quite a lot as there are several tasty recipes in there. This time I made cranberry and orange cake, and also blueberry and almond (should have been walnut, but we didn’t have any). I froze the blueberry one and thought I might slice up part of the orange one as well and freeze those so we could easily grab a slice to go into packed lunches and the like – but my partner arrived home and quickly assured me that there was no need to slice and freeze it, he could just slice and eat it instead! At least it’s going down well so I don’t feel bad making banana bread that no one else will eat. And of course I will get to eat them all All rights reserved. © Text and image copyright Fleur 2024.

Glad your partner loves it I am confused about the hard lumps part though. Never mind..I was replying to the hard lumps discussion. I get it now..

I think that for Americans "coffee cakes" are cakes served with coffee, not cakes with coffee in them. I often make a "coffee cake" that is a sponge cake with coffee in it filled with a soft coffee cream (whipped cream, coffee, sugar and mascarpone).

It's always gratifying when someone wants to eat what you've cooked. I have a recipe for a loaf that involved soaking bran cereal in milk then adding apricots among other things. I might need to bake that again soon. I could eat the rest of the cereal for breakfasts.

I tried making Weetabix cake once. It was OK but not really worth bothering with unless you had excess cereal to use up or something!

They're called coffee cake because they're eaten with a cup of coffee. I'm sure your cranberry and orange cake is delicious along with the blueberry and almond. You made your partner happy.
