Fixing Dinner for One Person

I don't like fixing dinner for one person! Yes, I'm whining about being alone, for five days
Jay has been having a wonderful time, hanging ten with his nieces, nephews, sisters and many other relatives.
I asked him about the funeral dinner, he said it was basically OK. Southern cooking is a memory that will stick in his mind, forever and a day. Yet, nothing remains the same, in the times that we're living in.
Jay will be staying in a motel tonight, probably somewhere in Ohio. He left Alabama today, heading north towards Michigan. From a motel in Ohio, Ann Arbor will be about a two hour drive tomorrow.
He has a doctor's appointment Wed. at 1:30P in Ann Arbor, Michigan. This hospital is approximately four hours south of where we're living. They will be examining Jay's back, to determine if he's a candidate for back surgery.
Jay has deteriorating disk disease, which keeps progressing as time goes on. He will probably need surgery within the next year.
We'd appreciate all the prayers that you can offer up:) Thankyou!

Then you understand what Jay is dealing with! He's a good driver, but Jay is getting older, also. He does need more sleep than he actually allows himself.

Wishing him a safe trip home, Hope all goes well with the appointment, Now you know why I just love to plop some frozen food on a baking tray and heat it up in my toaster oven, I don't always like to fuss about my food since its only me, However, occasionally I will fix myself something in my slow cooker,

I actually don't like to cook, even for two. Years back, I got burnt out from preparing meals day after day after day, for almost 50 years! I basically, got sick of planning meals. Now, I cut corners every single day!

Cute relatives. Some people like having some time to themselves. I am sorry to hear that Jay has that disease. No fun.

This little boy is a cancer victim, it's an older photo. Jay road bike for Make a Wish Foundation, to raise money for these children.

I hope Jay has a safe trip to Ann Arbor. I hope his appointment goes well. Sending prayers and positive thoughts. Have a good day. Great photo. P. S. Don't feel bad....I've been alone since February 1!! Believe me, I don't like it!

Jay just called he, his appointment was earlier than he thought. He's in Michigan and presently, driving towards home:) I hate living alone!

I don't have problems cooking for one when I have to, but if it's just me (rare!) I often just raid the freezer for a frozen homemade meal in the stash I keep there for busy days, or I eat a big salad.
Sorry to hear he has the deteriorating disc thing going on, that is no fun. I have 2 of them myself, but I try hard to pretend they don't bother me. That doesn't really work. But I have a son who needs me right now, so I just do the basics. Mine is not bad enough for surgery, I hope it takes it's sweet time to get to that point!
I'm sure you are anxious to see Jay. Hopefully, tomorrow will go quickly for you both!

He just called and Jay is done with his appointment. He's on the road traveling towards home:)

I had back surgery over 25 years ago. I thank medicine. If I had lived some decades before, I´d be in a wheelchair at 50. Now back surgery must be even better.

@kobesbuddy I have heard that now discs are replaced. In my time they just took out crushed discs. And once in a while I have excruciating pain for some days.

That is an old photo, Jay was riding bike for a cancer organization. Make a Wish Foundation, for children. Jay stopped when he found out, those children weren't getting even a small portion of the money raised:( Shame on Make a Wish Foundation, making some head honchos at the top, rich
