Today is a vegetarian day

I didn't plan it specifically. It just worked out that way Scones for breakfast, Peanut butter toast for lunch and a veggie burger (I liked this one, it was stuffed with quinoa and spices) for dinner. Do you do a vegetarian day sometimes? Is it by accident or design?

Normally my vegetarian days are by chance. Sometimes I forget to thaw meat, other days I just want to eat something lighter. Today I made a spinach omelette. It was delicious. I added cheese on top and ate it when the cheese melted.

@snowy22315 Today I didn´t want to work much so I made a spinach omelette. At the end I placed a couple of thin slices of cheese over it and they melted. Yummy!

Actually, my cholesterol was high the last time it was checked. I've deliberately been eating more chicken, beans, almonds and cut way back on red meat or pork. I haven't been frying things, baking or grilling instead. Tuesday, I have a doctor's appointment and hopefully, my cholesterol level will be improved.

@snowy22315 Six months is enough time to make some change. I did it once before, then started eating a lot of meat and things that aren't healthy. I have eaten about five eggs, in the past six months.

I usually do the old Meatless Mondays, but really, I don’t eat much meat anymore. I was on a salmon kick for a good, long while, but I’ve been eating sweet potatoes and tofu tacos lately (with a BBQ chicken pizza making an appearance sans chicken, which goes to the dog).

Tofu tacos sound interesting. If you can find it, or I am sure you can order it from Amazon, Jackfruit in sauce can make a good meatless taco or sloppy joe too

I often do vegetables (vegetarians most of the time, not vegan) and it's always by accident. Yesterday it was a vegetarian day, we had a zucchini omelette for lunch and for dinner several kinds of cheese stuffed peppers.

@LadyDuck I never had that. When I was at Trader Joes I got a Spanish cheese trio. One is manchego which I am sure I have had before, but don't know about the other two.

Nope just sometimes if I am not too hungry I might have a day where I will have some cottage cheese and later some spaghetti and it works out like a vegetarian sort of day without the veggies.

@snowy22315 nothing just don't always have them on hand, I have canned diced tomatoes, sauerkraut, and spinach a home and will use them to add to meals,

Nothing wrong with that,although throwing some protein in there is probably good idea. Did you ever get your PP straightenedout? Mine seems to have lost track of my yearly income. I know Iit must be daunting to keep track of all those income dribblss, but it is all computerized and something they need to know.

@Dena91 I think they are losing it.. I don't mean the paperwork specifically, but just in general. Unless you have money stuck in the old one might be time for some new accounts.

My mother normally does all the cooking and she mostly prefers veggie recipes. My brothers would occasionally help out, which is nice because we get to eat something different.

Occasionally we might have a vegetarian day but it's never by design. I wouldn't find it hard to have lots of them but Vince likes his meat.

I never intentionally do a vegetarian day. I could probably do vegetarian at least one day a week without any trouble. Your burger sounds good. Have a good weekend.

@snowy22315 We don't get a choice of what we have. They occasionally have stuffed shells with cheese, vegetable lasagna and a couple of dishes like that.
