I´m almost drunk but the rest of the pancakes won´t be lost. I had discovered that Anita had made a huge amount of crepes. And I wondered what I could do with them. Yesterday I made 2 with spinach cream for dinner but I had a lot left. I sealed them in plastic but I am not sure how they are best kept and I will not eat aged crepes. So today I went to check some oranges I had bought. THEY were ages old so I picked up the one that looked best. I cut it in half, smelled it and was perfect. So far, so good. I had read about crepes Suzette as I knew that I did not have all the original ingredients. But all good food have started when a chef has to make something good for a King and either messes up or doesn´t have all he needs. So I started. I doubled the crepes as they look when made for Crepes Suzette and poured the juice of half an orange over it. Then I added butter and sugar. And to the microwave oven. I wanted it to be very hot as I wound pour a bit of rum over it and flambee it. When that was finished, I added more sugar and tried with no success to pour some rum over it. It seemed that To much time had gone by since I had used it that the tiny hole was closed. So I used my ful force. And suddenly a lot of liquor got out of the bottle. I picked up the matches and lighted it. The end product was perfect but I´m glad that I had only made one. I don´t drink in the morning because I might get drunk. I do know though that if you burn the liquor, most of the alcohol will burn and only the taste will be left. I´ll get up later and eat something healthy for a real breakfast. Bread and butter will be fine. That crepe was delicious but not for every day. Do you make delicious unhealthy food once in a while?

Marga, I make pancakes and freeze them all the time. I put them in a ziploc bag, they keep well. You can just take out the ones you need a few at a time.

@MarieCoyle I may ask my peer if the two of us can make pancakes together and put them in the freezer. She is an excellent cook. So she would help me make good pancakes. We made pancakes years ago and I think we halved the recipe. I know that we didn't freeze any How long do they stay in the freezer? Thank you for the idea!

@LovesEverybody Pancakes can be frozen for several months. After making them, let them cool a bit. Doesn’t take long. I stack mine with little squares of waxed paper in between them, but that’s just my own preference. I put them in a ziplock. You could use a Tupperware container. They will also keep in the refrigerator for about a week if they are stored in a tight container or ziplock. Pancakes are very inexpensive to make, easy, and taste great. Such an easy meal. I do the same thing with waffles sometimes.

Those crepes do sound good. Tasty with that liquor. I eat unhealthy food way too often. Enjoy yourself.

Oh my goodness, it can be dangerous when too much liquor get out of the bottle. I put the pan on fire a few times when doing Crêpes Suzette. I like to make savory crepes filled with chopped ham, cooked mushrooms and besciamelle sauce.

This one was the kind of bottles that has a special thingie so that only a bit can get out. Only it didn´t. And I shaked and shaked until a lot came out. But I did not do it in the stove. As I had heated everything in the microwave oven, I thought that the pancake would be heated enough so as to have the liquor burned. It did.

@marguicha I know how those bottle are made, I hate them, nothing gets out and suddenly too much! Now I am careful when I use the stove, I pour the liquor first on a small glass and then I pour over the crepes and flame.

Those Crepe Suzettes sound delicious, I haven't in a long time but I used to make a Chocolate Rum Cake everyone enjoyed,
