Good morning 5/12/ what do you plan to cook today?

Good morning myLot! I am feeling a bit better about my anxiety. My psychiatrist increased one of my medicines he said would help my anxiety and it is somewhat helping. Then while reading earlier a discussion by @snowy about mashed potatoes. She and everybody else made homemade ones. I am not going to kid myself and attempt those on my own. So, I made a bag of instant mashed potatoes. I made the only bag I have that didn't require milk which I need to get, and made roasted garlic mashed potatoes and they look delicious! If I was lucky enough to have parents who were living I am sure they both would be so proud of me. I am having a chipped ham sandwich and my mashed potatoes for dinner tonight. A Yummy meal! What are you cooking today? Sorry, I know I am early but I do all my things super early. I don't function well at noon or later

We ate a large late lunch, so nothing tonight,,,but I did make some homemade waffles this morning.

I sometimes don't eat dinner when I go out to lunch with my sister as almost always my sister takes me to good places and I eat more than I would eat had I eaten if I made something myself at home. I almost always end up with an overfull belly I don't think I have ever had homemade waffles at home. I don't think my mom had the machine a person uses to make homemade waffles. I grew up having Daddy put frozen waffles in the toaster for me.

@LovesEverybody I remember one time my mother got a waffle iron for Christmas. I have had mine for many years.

@snowy22315 Maybe one day when my new medicine is working better I will ask my sister to get me a waffle iron for Christmas!

I had steak quesadillas, and they were quite good, but the steak was not cooked by me. It was leftover from the day before, and I just added the other ingredients.

That sounds yummy! I haven't had steak in a few years. I might have a salad with chicken on Monday with chicken already cooked.

@AmbiePam Thanks! I hope it will be! I have the chicken being delivered as a part of my grocery order that is coming from Walmart between 8 a.m. and 9 a.m. this morning. I realized I needed croutons for my salad so I also ordered a bag of them! I haven't had a salad with chicken in many months so I am excited!

Your meal sounds good too! My salad with chicken I had for dinner today was delicious! I have made baked potatoes in the microwave with my peer. but it has been a couple of years since we made them.

@just4him the few times I made them was in the microwave. My mom made them in the microwave each time she made baked potatoes. I may buy potatoes as now I would love a baked potato as it has been a few years since I had one

Thank you! I was so wound up from cooking the mashed potatoes that I only had a sandwich for dinner and that was enough. I will have the mashed potatoes with my dinner this afternoon!

I am lucky enough now and my mom cooked. When I cook I like to cook easy meals. Do you take antidepressants or other types of medication? I need to change my medication because it doesn't work at all.

I cook very easy things and mostly side dishes. I am bipolar so I can't take antidepressants or it could put me in a manic state so I take mood stabilizers and antianxiety medicines. none of my medicines work
