wondering what kind of plant grows good in full sun under an eve

Have you heard of euphorbia plants? they are dessert plants that grow anywhere. They have quite a number of different flowers to choose from. The size vary from tiny to giant trees. You can have them in your window pane, kitchen window, bathroom, or anywhere you want to put them, and perfect also for outdoors.

I find that the weeds grow the best..lol. Anything should work out well, maybe even some roses.

That depends on where you are. If it gets very hot and you can't water frequently, you may want to look at some desert plants. Have you thought about container gardening? That way you wouldn't have to worry about the soil. Flowers in pots need to be watered more often and fed regularly, but that might be a good trade off.
