Homemade Whole Wheat Bread recipe search

My husband has started taking lunches to work more often and has mentioned he would like some whole wheat bread for sandwiches. I would rather make my own that get store bought and am looking for some recipes. All of the recipes I have come across so far that sound like a good basic WW bread, all make several loaves...I really only want one at a time, but would be willing to try a recipe that makes two. Does anyone have a yummy whole wheat recipe that they make and would be willing to share with me? Thanks!

I found some, try this: Classic Whole Wheat Bread INGREDIENTS * 2 tablespoons white sugar * 1 tablespoon active dry yeast * 3/4 cup warm water * 1/4 cup milk * 1 tablespoon vegetable oil * 1 cup whole wheat flour * 2 cups all-purpose flour * 1 teaspoon salt * 1 egg, beaten DIRECTIONS 1. In a small mixing bowl, dissolve the sugar and yeast in warm water. Let stand until creamy, about 10 minutes. 2. In a large mixing bowl, combine the yeast mixture with the milk, vegetable oil, whole wheat flour, 1 cup of the all-purpose flour and the salt; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. 3. Grease two 8x4 inch bread pans. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into the pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C). 4. Brush the risen loafs with lightly beaten egg. Bake at 400 degrees F (200 degrees C) for 30 minutes, or until the bottom of the loaf sounds hollow when tapped. ====================================================================== Whole Wheat Bread II INGREDIENTS * 1/3 cup shortening * 1 cup hot water * 1 cup packed brown sugar * 3 (.25 ounce) packages active dry yeast * 4 cups warm water (110 degrees F/45 degrees C) * 4 tablespoons white sugar * 4 teaspoons salt * 6 cups bread flour * 6 cups whole wheat flour DIRECTIONS 1. Dissolve brown sugar in 1 cup hot water. Add shortening, and stir to melt. Let cool. 2. In a large bowl, dissolve yeast in 4 cups warm water. Add white sugar, salt, and bread flour. Beat well. Stir in shortening mixture. Stir in enough whole wheat flour to make a stiff but not dry dough. 3. Turn out onto a lightly floured surface. Knead until smooth and elastic. Place in a large, well oiled bowl. Cover, and allow to rise until dough doubles in bulk. 4. Divide dough into four equal parts. Shape into loaves. Place in greased, 9 x 5 inch pans, turning each loaf over in pan to grease top. Allow to rise until dough doubles in bulk. 5. Bake at 350 degrees F (175 degrees C) for 35 minutes. Let cool before slicing. ======================================================================= Easy Whole Wheat Bread INGREDIENTS * 3/4 cup warm water (110 degrees F/45 degrees C) * 1 tablespoon powdered egg substitute (optional) * 2 tablespoons vegetable oil * 2 tablespoons sugar * 1 teaspoon salt * 1 cup bread flour * 1 cup whole wheat flour * 1 teaspoon rapid rise yeast DIRECTIONS 1. Dissolve egg substitute in warm water. Place all ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Whole Wheat cycle and Regular bake time; press Start. 2. After 5 minutes, check how the dough is kneading, it may need either 1 tablespoon of flour or 1 tablespoon of water, depending on the consistency. Once the bread is done, allow it time to cool on a wire rack before cutting. =================================================================== Buttermilk Honey Wheat Bread INGREDIENTS * 2 1/2 teaspoons active dry yeast * 1 cup whole wheat flour * 2 cups all-purpose flour * 1/2 teaspoon baking soda * 1 teaspoon salt * 3 tablespoons honey * 1 1/2 tablespoons vegetable oil * 1 1/2 cups buttermilk, at room temperature DIRECTIONS 1. Combine the yeast, whole wheat flour, all purpose flour, baking soda, salt, honey, oil, and buttermilk into pan of a bread machine. 2. If baking in bread machine use medium temperature setting. 3. If baking in an oven, use manual or dough cycle to knead dough. Remove from bread maker, and place in a greased loaf pan. Let rise until doubled in size. Bake in a preheated 350 degree F (175 degree C) oven for 25 minutes, or until bottom of loaf sounds hollow when tapped. ======================================================================= Honey Whole Wheat Bread INGREDIENTS * 1 1/8 cups warm water (110 degrees F/45 degrees C) * 3 tablespoons honey * 1/3 teaspoon salt * 1 1/2 cups whole wheat flour * 1 1/2 cups bread flour * 2 tablespoons vegetable oil * 1 1/2 teaspoons active dry yeast DIRECTIONS 1. Add ingredients according to the manufacturer's directions to your bread machine. Use the wheat bread cycle and light color setting. ==================================================================== Whole Wheat Bread III INGREDIENTS * 1 1/4 cups warm water (110 degrees F/45 degrees C) * 1 1/2 tablespoons instant powdered milk * 1/3 cup honey * 3 tablespoons margarine, softened * 2 tablespoons white sugar * 1 1/2 teaspoons salt * 3 cups whole wheat flour * 1/4 cup cornmeal * 2 1/2 teaspoons active dry yeast DIRECTIONS 1. Where you after homemade or breadmaker recipes? Easy Handmade Wholemeal Bread 1 tsp sugar 1 tblspn loosely crumbled compressed yeast 1/3 cup lukewarm water 2 & 1/2 cups plain wholemeal flour 1 tsp salt 1 tsp honey 1 cup milk sesame or poppy seeds • Combine yeast, sugar and lukewarm water and stand in a warm place for 5-10 minutes, or until frothy. • Mix flour, salt and honey in a bowl. • Add yeast mixture, and milk (heated to almost blood temperature) to flour and stir thoroughly with a wooden spoon until mixed. • Knead on a lightly floured table for 10 minutes, or until dough becomes firm and pliable. • Place in a bowl, stand in a warm place for 40 minutes or until doubled in bulk. Knead dough lightly, mould into desired shape and stand in a warm place for 10-15 minutes. • Sprinkle with sesame or poppy seeds. Either type is fine. Even when baking in the oven, I often use the breadmaker dough cycle and let it do the kneading for me. Thanks for posting these!

Here is a pretty basic ricipe that I use all diferent types of flour with. The most important thing in wheat bread is the gluten, Whole wheat flour can tend to be tough and dry so I add gluten whenever I make bread. You can find it in the heath or bulk food section of just about any store (ask a worker if you dont see it) but dont worry it isnt like a funky health food or anything it is just a natural part of flour that makes for soft moist bread and it adds nutrients that are naturally in it already. Mix these three ingredients and stir until yeast is desolved 1/2 cup realy warm water 2 pkg dry yeast 2 tbsp honey Alow yeast to bloom, it will foam up to at least double its original size, now add 2 more cups warm water 1/2 cup butter or oil (whatever you prefer) 1 tbsp salt 3 cups flour ( wheat, white, spelt, rye, wichever you like) 1/4 cup gluten mix until the batter bacomes stringy and smooth, alow to rise for about 10 min so you know the yeast is working than slowly add another 3-4 cups flour until the dough cleans the sides of the bowl. Kneed for about 7 min then let rise until it doubles. Punch it down and need a few more times. Seperate into laofs a place on cookie sheet or loaf pan. Beat an egg and brush over loafs to give it a nice crust and let rise again until double. Bake at 325' for about 45 min depending on loaf size. I like to add a little oatmeanl and crushed seeds and nuts but you can leave it plain as well. Hope you enjoy it. Let me know if you have any questions.

I have always heard about adding the gluten, but not tried it yet. I thought I did have some here (use in veggie burgers) but not finding it now, so will pick some more up and give it a try this weekend. Thanks so much!
