Are You A Diabetic? - Want To Make Your Own Snack Bars!

Food can be expensive but when you are a diabetic, it is even worse. This is a frugal way to make snack bars for the diabetic. Who says eating heathy has to cost an arm and a leg? Enjoy. The first time I made these bars, they were dry and I could not figure out why but I finally got it figured out why. Instead of addding Powder nonfat dry milk you need to add liquid notfat milk. Now they taste much better. They are not dry at all. To store these snack bars simply wrap each bar tightly with plastic wrap and keep frozen for use as needed. I put several individually wrapped bar in a gallon ziploc bag in the freezer. On-The-Go-Snack Bars (Diabetic) 1-1/3 cups flour 1 cup quick oats 1/2 cup Splenda 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. nutmeg 1/4 cup nonfat milk 1/2 cup applesauce 1 egg 1 egg white 1/2 cup raisins 1 cup mashed bananas 1 tsp. vanilla Stir together flour, oats, Splenda, baking powder, baking soda, cinnamon and nutmeg. Add remaining ingredients and mix until smooth. Spread batter evenly in a non-stick 9x13-inch baking pan or spray pan with cooking spray. Bake at 350 until bars are golden brown and just begins to pull away from pan sides, about 35-40 minutes. Serve warm or cool, cut into 2 inch squares.

This sounds like a great recipe. Do you by any chance know how many sugars, carbs, fats, calories it has? I am planning to try it. Do you use this recipe strictly for snacks, or do you use it as a meal substitute. Also, do you keep it in the refrigerator, and if so, how long does it keep? Thanks for sharing this recipe!!!

I am so sorry, I do not know how many calorited or fats, sugars, or carbs the recipe has. I am so sorry, I wish I did.

Oh man! Bananas, applesauce and raisins???? I am drooling now! I absolutely love fruit! But I have to be careful how much I eat of it. I will have to try this one out! My kids are actually pretty good about eating healthy with me. :) So, I am sure they will try to steal it from me too. LOL Thanks for including diabetic recipes!!!!

I wish I could bake like you. I admire you so very much. But I am usually to sick all the time to cook. I am diabetic though. Maybe I can keep some of these recipes and have my mother bake them for me.

It sounds like people whow like this sort of thing would enjoy these. I'm going to send the recipe to my motherit sounds like something to her sweet-tooth taste.
