No doubt, you have heard of pudding pudding mix in cakes but have you ever heard of pudding it in cookies? yes, it can be used to make wondreful cookies as well. The recipe calls for vanilla pudding but why not use your imagination and use chocolate or chocolate fudge instant pudding instead or even pastashio. The taste could be dreasticly changed. Oatmeal Pudding Cookies 1-1/4 cups unsifted flour 1 tsp. baking soda 1 cup (2 sticks) butter or margarine, softened 1/4 cup granulated sugar 3/4 cup firmly packed light brown sugar 1 package (4-serving size) instant vanilla pudding mix 2 eggs 3-1/2 cups quick cooking rolled oats 1 cup raisins, optional Heat oven to 375. Mix flour with baking soda. Combine butter, sugars and pudding mix in a large mixer bowl, then beat until smooth and creamy. Beat in eggs. Gradually add flour mixture; then stir in oats and raisins (batter will be stiff). Drop by rounded teaspoonfuls onto ungreased baking sheets, about 2 inches apart. (NOTE: I flattened the cookies a little bit). Bake for 10 to 12 minutes. Makes 5 dozen.
