Poncho's Mexican Restaurant Cheese Dip

2 pounds American Cheese 2 cans Rotel 8 ounces Water 1 tsp black pepper 2 tsp. garlic powder 2 tsp. cumin Grind Cheese in blender. Boil Rotel, water and seasoning, add cheese until smooth, creamy and hot. Serve with tortilla chips.

me too. We don't have a Pancho's here in central Arkansas anymore. Anytime I go to Dallas, I make sure we eat there.

I live in Kansas now, but I used to live in Richardson. We used to eat at Poncho's all the time. I sure miss it!!

We don't have one in the Little Rock area anymore either. I miss it too. I'm glad I still have this recipe because I too love the cheese dip.

I have never been to a Mexican Restaurant before. Is there food spicy or can you get Mexican food that is not spicy. I have an ulcer and cant eat spicy food. My husband will love this recipe. He used to live in New Mexico when he was younger and he loves Mexican food. Thanks for sharing

It kind of depends on what you order. You can get spicy things, or some that are not so hot. I like making Mexican food at home, that way I can moderate the spice. If you will make this, and drain the Rotel, it will be less spicy. The more juice you put in the hotter it will be. You can be mild or hot Rotel.

This sounds great. I have never heard of this restuarant before. I love to go to a mexican resturant and have their cheese dip and salsa. Thanks for sharing.

Poncho's is mostly in the south. We used to have one in Little Rock, but it is now Mexico Chiquito's. When we go to Dallas to see friends, my kids always want to eat at Poncho's
