I am looking to change to ubuntu too, but most of what I use on windows is available for linux and ubuntu already.
I use vlc for windows and would just use the linux version, it is an all purpose open source free media player. It plays audio and video in just about any format that is available.

well there r many.vlc player works good, but for many amorak and mplayer is also good.i also suggest u try opensuse 10.3 because i found it a much easier to use solution.and unlike the other linux distros, it had mp3 support(real player) as well.

If you want an mp3 player similar to winamp you can install XMMS

ITunes will play MP3's. Not sure if it will run off Linuz though.

The best audio player that I know for Linux is Amarok. Amarok does not support MP3 by default, but if you open a MP3 file in Amarok it should prompt you to download the support and install the feature, then you will be able to play the files with no problems at all.
