I know a few people that collect Mego dolls, Little People (from Fisher Price) and role-playing games. I used to collect comic books but that is getting expensive since the new comics are three dollars an issue. I still collect coins and stamps.
I have one friend who collects dust in his house.

i saw t=one time on tv, there was a person who collected napkins from restaurants, fastfood, anywhere he can find the napkins. it wasn't gross or anything. it was just a unique collection.

I collect books, etchings and white English ironstone. I had an aunt who collected salt & pepper shakers and I always thought that was a little strange but I expect there are many odder colections than that out there.

I saw a story on the news about a man who collects miniature shrunken heads. A bit macabre, but hey, whatever floats your boat. : ) A Christian comedian also talks about collecting air sickness bags from airplanes. He has traveled on a lot of airlines and he has bags with Korean on them, bags with rain clouds, and one that says in Swedish, please don't throw up.

I collect cinema tickets. I don't know why, but I do collect them and write the name of the movie and the date on the back. Not sure if it's weird though. I also collect newspaper articles that I like. I have lots of them. That's in addition of stamps and coins (as you mentioned).
I once knew a guy who collects swords of every kind. He has swords from many different countries.

I do not collect anything other than dishes and glasses that are too expensive for me to get all at once.
The strangest and most disgusting thing I ever heard someone collect is dandruf. He kept it in a bowl

I can't remember who it was. (someone at school)
But he actually collected different colours of string, Kinda like the person who did it in the Simpson's. Yes he took the string from anything that had a thread and I would hate to think if he still does it.
