Lot of baking, n a laittle time..

I am a baker from way back. Just love baking! I used to start baking/freezing after Thanksgiving to have enough for all the gift baskets I used to do. But now, no one to give them to anymore and I don't bake as much. HOWEVER, I miss the tradition of baking at christmas time. So, I finally figured out how to make alot of differnet cookies without haveing tons to eat all by myself. Okay, so I"m not a Rocket Scientist and it isn't earth shattering, but it works for me! I will take my 4 most favorite recipes, divide the recipe into 1/4ths and make a 1/4 batch of four differnt kinds of cookies! Well, not counting sugar cookie cut outs. Those are my GD's most favorite. I started her making those when she was 2,1/2 and she memorized the recipe and still to this day remembers it and other than the oven parts, can bake them on her own. But I stray form my topic....it's one of those "why didn't I thin of that earlier?" thingys. How do you handle the need and want to bake with the fact that it is only you left to eat it all?

That is why I've started using the packaged mixes as the basis. We want portion control and it just doesn't work for me to be dividing the recipe for a batch of cookies into like thirds and then mixing up some teeny little bowl of dough. If they want us to use egg in the recipe, since it is a box mix anyway, why doesn't it just come with powdered egg already in the mix? I once read a marketing report that said the reason is NOT because fresh eggs actually taste any better, but because they think housewives are really stupid and like to break eggs. They said women don't feel important if the package has everything in it and that breaking an egg makes us feel powerful. I'd feel more powerful if I could break a few eggs over the heads of men who wrote that report. So, how do you divide an egg into thirds? Even with those cute little tupperware things that actually do hold about 1/3 of an egg, raw eggs don't keep very long in the fridge, and pulleeze don't suggest those little cartons of egg substitute because the yolks contain important nutrients. So I've actually been experimenting with ways to use the package mixes to make single servings cakes and cookies. What has worked best for me so far is to do this kind of "baking" at breakfast time when I'm breaking up eggs for an omellette anyway. Better ideas would be most welcome!

holy Guacamole! Where the confound blitmitz were my fingers when I typed that title! GOod grief!! It should be "a little time". I just came from a "party" on MyLot - you'll have to excuse me! But I have to admit that I have used box mixes from time to time. I always use them when baking cupcakes. I like making those little tiney ones instead of the regular size ones. The tiny ones you just pop one in your mouth as you walk by! No crumbs, no messs! And I love Bisquick and that makes some pretty good breakfast things with nothing more than milk and eggs!

I healthy up the biscuit mix with fresh ground flax seed and a handful of different ground up whole grains and all that good for you stuff. What I meant was I just make the dinner dessert in the morning stealing some of the egg that would got into the omelette. But breaksfast breads are what I bake most of, too, but even so we could never use up a whole box of bisquick before it got stale. Talk about spelling--how did that extra "l" get in the omelette? Oh, I came from the same party, lol, must have been from just breathing the air. Mind if I take some of your baked goodies back with me? I think I'd better go back and make sure everyone is still having a good time!

Drannhh - why do you use Flax seed? I am interested in learning about that little goodie! I also like to bake breakfast breads and rolls. Don't mind missing them at dinner, but sure is nice at breakfast or for breakfast
