A lot of people I know seem to find it very hard to find meat-free meals for Friday's during lent. It's not that they never eat meat-free meals, but when lent comes around they always seem to forget about all of those choices. As a vegetarian, I don't think it's that hard. So I am starting this list of filling Meat-free meals for all you meat-eaters that are having a hard time. Feel free to add to it! -Grilled cheese sandwiches -Mac and cheese -Any pasta and cheese -Pasta and fish -Stir fry (veggies over rice) -Pizza or pizza bagels (bagel, pizza sauce and shredded cheese) -Tuna fish sandwiches or tuna salad -Big healthy veggie filled salads -Eggs in any style -Soup (cream of broccoli, cream of potato, lentil) -Breakfast for dinner! (pancakes, waffles, cereal, bagels and cream cheese) -Morningstar products (sorta tastes like meat but it isn't!) -Peanut butter and Jelly sandwiches That should be enough choices to get you through the Fridays of lent! Feel free to add ideas if you have them :)

I'm going to go ethnic food on you. Pieroghi - Boil or deep fry Pasta pockets filled with cheddar cheese, mashed potatoes, and onions (optional) Haluski - Fry shredded raw cabbage and onions in butter salt and pepper and mix with buttered egg noodles. Potato pancakes. Left over mashed potatoes or shredded raw potatoes with shredded onions (opt) mixed with egg and flour then fried to a golden brown in a pan of oil. Shrimp Alfredo And I have to quit here because now I am getting hungry. lol

Oh i love pieroghi's and those are vegetarian! Good suggestion :) I think I'll add that to my list of meal ideas. I've never had potato pancakes but my husband told me they are very good. And I bet they are filling!! Great suggestions!

Here's another good one for the Mexican lover, I don't know if this is officially how these are made but this seems right Quessadillas: Tortilla shell, fill with cheese and chiles (optional), fold in half and heat in a pan on the stove for enough time for the cheese to melt. Dip in salsa, sour cream, guacamole, or pico de gallo... or all of the above!!

If you are a big eater you put one shell in the pan and load it full of cheese and optional chilis and tomatoes and more cheese then put another shell on top of that one. But this also made me think of my kids favorites....Fish sticks and Kraft Mac and cheese. LOL We just had that for dinner last night. Next week it is veggie omelets and toast.

Although I don't celebrate Lent this has helped me. My Grandmother, who is 77 and bedridden, has a very poor appetite and my Mom has been trying to find things she likes...one problem is she won't eat meat. So, this discussion has given me some ideas to pass onto my Mom. **AT PEACE WITHIN** ~~STAND STRONG IN YOUR BELIEFS~~

Great! I hope it helps give you guys lots of ideas. Meat-eaters seem to have a hard time finding meat-free meals b/c they just don't think about it often. Enjoy!!

You can always make beans and rice, veggie chili, roasted veggie ratatouille, veggie lasagna, spinach, artichoke and potato soup (use veggie broth for the base), crab stuffed portabello mushrooms, or anything with tofu.

Mmm, I haven't had veggie chili in awhile! That sounds good b/c I'm cold today.

Strange! I don't understand how seafood/fish could have been excluded from the list. At least the way I was raised, fish doesn't count as meat, therefore it's perfectly fine to eat on non-meat occasions. My family isn't religious at all but because my parents were raised in a Roman-Catholic communist country, it's always been tradition to abstain from meat on Fridays --- not just Fridays during Lent, but every Friday in the year. We always eat fish. Salmon's my favorite.

Great ideas - can always use them this time of year. How about sweet potatoes, I can make a meal out of those! Sushi is always good too and eggplant and vegetable lasagna.

Well, I do like veggie lasagna and it's been a long time since I've had it. As for the other things, I've never really liked sweet potatoes but that is a good suggestion b/c I know a lot of people who do. I don't eat sushi. I tried one but of seared ahi tuna once and... it didn't go well. I pretty much lost my entire appetite for the rest of the night.

Glad you like them! I hope it helps! I know many people who end up eating the same fish meal every friday b/c they can't think of any other ideas.
