I have done it both ways. I like mine with some onion, potatoes, carrots and sometimes some celery. I usually just salt and pepper it, but one time I had it at one of my sisters friends houses and she put a package of onion soup mix on hers. It was very good. You are making me want to buy a roast.

Since I am a stay-at-home mom I almost always slow-cook it
in a large pot with carrots to add a sweet flavor, celery,
and these red potatoes called "butters." I can just eat the
stewed potatoes after it finishes because I think they are
SOOO good almost like a soup in all the broth. We also use
red onions and some millet to give it a different texture.
When I was first learning how to even make pot roast I did
cook it too fast, in a 1 1/2 and the difference is clear
when compared to a five hour roast. I love the way it falls
apart and even has a slight liver-like taste and the fat, yum.
When I cook it faster the whole plate just doesn't come
together because the meat doesnt seperate into the broth
I guess. One mistake I also use to do is use real lean
peices of meat, this was before I had a clue, and man, I
have come so far, meat made me so clueless.

First I sear the Roast on a skillet.
Then I put water and veggies in the pot, usually: potatos, carrots, celery, and corn. I place a tray over the veggies and put the roast on top of it, so it's not in the water.
Season with garlic salt, black pepper and cheyenne pepper. Then I cover and let it simmer for a few hours depending on the size of the roast.
Usually turns out pretty good.

I usually cook my pot roast in the oven in a roaster. I cook the meat slowly for about 2 hours on 300 degrees. I cook it with lots of onions around it. I then pull it out of the oven and put carrots and scrubbed unpeeled potatoes around the roast. turn the oven up to 375 and cook until the veggies are done. If I will be at work all day then I just throw everything in the crock-pot set it on low and let it cook all day.Sometimes i cook the meat meat with two cans of beef broth and onions. When the meat is falling apart tender I pour the juice into a huge sauce pan bring it to a boil add egg noodles and cook until done. I then add the cooked beef to the pot. My son loves beef and noodles over top of mashed potatoes.

Slow cook, all day, potatoes, carrots, onions --- slow cooking in a crock pot all day is best.

Since we just had roast for dinner tonight, we seered it first, then we put a can of chicken broth in it. Then seasoned it with Garlic Salt, then put a whole big onion chopped around it so they would soak up the chicken broth.
We put that in the oven on 450, and let it cook for 1hr & 1/2.
My hubby made the gravy for it out of the chicken broth, and wow it was good! He was very proud of himself for making the gravy, because it was his first time making it, and it turned out so good.
