Potato pancakes

I made potato pancakes from scratch for the first time this morning. My brother cooked the bacon on a cookie sheet in the oven while I made the potato pancakes and scrambled eggs. They turned out great. Do you like potato pancakes? Have you ever made them before? How do you make yours?

I just love these! I had them first in Philly and then had them in Germany in 2006. They were called Kartoffelpuffers there. In Philly, they're served with apple butter and sour cream, but in Germany (Frankfurt), they had apple sauce. Either way, they're great! I'm going to try to make some in the morning with the shredded potatoes we have in the freezer. I think they'll work if I thaw them first. Can't wait to try them.

I made some this morning using shredded frozen hashed browns that I thawed and mixed with eggs, salt, pepper, shredded onion and a little flour. They were SOOO good. I did use apple sauce and sour cream, but that's because I've eaten them that way before. But, they were good without it, too. I have batter left over to make more tomorrow. Maybe I should have added some green food coloring for St. Patrick's Day?? LOL

I love potato pancakes. I make them two different ways. One I put them in the food processor with the flour and egg and make a smooth batter. The other way I shred the potatoes, mix them with the flour and egg and fry them up that one. I'd love to put the onion in them, but then my husband wouldn't eat them unfortunately. I need to get some ground flax - found a great whole foods store here and they have everything - my favorite was this huge prepared foods department and saw some potato "latkes" there and am sooo sorry I didn't get at least one. whit

Potato pancakes... okay are those made with left over mashed potatoes.
Or do you just used powdered mash potatoes in your pancake mix.
I would love to have a great recipe for them so I can try them.
I like to either fry my bacon or microwave! prefer fry tho!

I don't use mashed potatoes. I shred the potatoes with a cheese grater. Here is a recipe from the Betty Crocker website.
Potato Pancakes
2 eggs
1/4 cup milk
2 cups finely shredded uncooked potatoes, well drained
1/4 cup Original Bisquick® mix
2 tablespoons thinly sliced green onions
1 teaspoon salt
1 tablespoon butter or margarine
1. Beat eggs in medium bowl with hand beater until fluffy. Stir in milk, potatoes, Bisquick mix, onions and salt. Melt butter in 10-inch skillet.
2. Drop dough by tablespoonfuls into skillet.
3. Cook about 3 minutes on each side or until golden brown.
(Total time will vary; cook or bake time is per batch.)

I love potato pancakes. I shred potatoes with skin on in my food processor. I add chopped onion, flour, ground flax and seasonings. I haven't made them in ages...I'll have to soon now that you've got me thinking about them ;)

I love potato pancakes! I used to make them pretty often when my daughter was younger but I haven't made them for ages now. I would do it in the blender, put everything in all at once but I forget my exact recipe at the moment. I once knew it by heart! I'm going to look it up and try them one day soon now that you've got me hungry for them.

Yes I've made them before and I've shared the recipe on here. If you search Oktoberfest, it should come up.
I have onions in mine and sometimes I do a very light flour/breading base for them.

My hubby makes his from a box mix. He uses bacon to lube the pan. 1 peice of bacon does the whole box. They come out pretty yummy.

I had a mix of potato pancakes in the cupboad for over a year. I decided to make them. Takes a bit of oil to get them to come out right. But, I found if I cooked a piece of bacon at a time, the bacon produced as much oil as needed. Kind of gave me an idea of how much fat the pancakes absorb as they cook.
My sister had a recipe that incorporated bisquick baking mix. That cuts down remarkably on the amount of oil needed. Much better for you.
