I volunteered to make sandwiches for our next American Legion Aux meeting.

Usually the person who volunteers brings three kinds of sandwiches. I know two kinds I will bring, but I'm trying to figure out the third one. Cream cheese and chive/onion (whichever one is in my garden) Tuna Fish (10 cans for $10 right now and there may be even cheaper ones somewhere) My husband said no to egg salad because he can't help me with the leftovers (gives him rotten egg like gas). I don't want ham because the salt level is too high for me so I can't help him eat the leftovers. We're both sick to death of chicken. So what do you think the third sandwich could be? I need something that won't cost a lot for possibly 10 to 16 people.

Turkey. Not especially expensive, AND it's heart healthy. Or you could do a kind I like to do -- fresh slices of tomato on a very grainy bread, with just a little "lite" mayo, & freshly ground black pepper. OR...you could go wild with banana & creamed cheese on whole wheat. Had a boss once who used to feed us (his work crew) with those, & they're tasty, different, & FILLING! Maggiepie

Nice ideas. I like banana and cream cheese the best. But already will have creamed cheese and chive. Tomato doesn't work very well unless you bring tomatoes and make them right then and there, they make sauggy (spelling?) bread. I'll think about turkey. That's two for turkey! You're tyed with peanut butter and jam!

I like peanut butter and bananas. I just found some cheap bananas at a Farmer's Market in my area (the rest have gone up double). But my hubbie can't eat bananas. But pb and j sound good and I may have some jam left over from when I made some last year.

The only inexpensive thing I can think of is Peanut Butter and Jelly or Fluff. Or how about some kind of tomato sandwich. This is making me hungry.

I like the pb and j idea. My husband wouldn't like the fluff. But he would like the tomato sandwich and I wouldn't. The problem with tomato, seeps through the sandwich if the meeting is very long. That's two for peanut butter and jam!

I don't know if you had the meeting yet, but I think turkey is a good idea. Some of the turkey lunch meat gets slimey though. Are you roasting a turkey? I suppose you wouldn't consider ham salad because of the ham - or even if you're sick of chicken, how about chicken waldorf sandwiches - like the salad, but you put it in sandwich form - add chicken, mayo, grapes, nuts if you want, - We just love these and they go over really well.

Meeting isn't until June, second Monday in June. Not roasting a turkey. Chicken waldorf I haven't had in years. It's a possibility, but I think the cost for the number of people there may be prohibative, but I think I'll have one for myself soon. Maybe the cost of things will go down. Reminds me that my brother wants me to make him something with nuts. Maybe I'll make one for him. Too good an idea not to do something with. Thanks and take care.
