How do I make my

quesadillas stick together? I put a shell in the pan, a layer of cheese, then the chicken or steak and another layer of cheese, then the top shell. But they never stay together when the cheese melts. What am I doing wrong? Is there a trick to it?

I have only ever made them in the microwave and have never had a problem getting 2 shells to stick together. But I also don't add chicken or steak, just cheese. Perhaps because there is so much between them they will not stick?

I cut the chicken pretty small, and also add small diced peppers and onions sometimes. I have had them in restaurants with even more filing, and they stick together. I know it can be done, I'm just not sure how.

When we were making quesadillas in pans still (got a quesadilla maker for Christmas! Yay!), this is how we'd do it. Flip the quesadillas by putting a plate over the top tortilla. Flip the pan with the plate so that the quesadilla falls onto the plate. Put the pan back down and slide the uncooked side into the pan from the plate. Then, when you want to get it out, just flop it back onto the plate. Once they cool off a little, the cheese isn't so hot and soft and they stay together better, too.

Have you ever been to a restaurant called Qdoba? THey only use one shell. Same with Chevys. It is THE way. Its asking too much from the cheese to hold together 2 shells. My hubby buys the larger shells and folds them over. The 2 sides stick,then you cut. So take the 2 shells and make 2 quesadillas. It is less frustrating.

Yes, I've seen them done like that, but I've also seen them done with 2 shells and they stay together. I use the smaller shells, like for fajitas, but I'll try the bigger ones and fold it over.
