12 more tomatoes

The baby and I went out to the garden last night after dinner and picked 12 more tomatoes. There are about that many more that will need to be picked in the next few days. I made sauce with 8 of them the other day for lasagna. My daughter will eat one like an apple, so that will kill off a few. What am I going to do with all of these tomatoes? Any ideas?

I picked my first three cherry tomatoes from my plants yesterday.

Do you can at all? I've been canning my tomatoes and have so far this year done 13 quart jars of salsa, 7 quarts of stewed tomatoes, and 20 some quarts of tomato sauce. Others I know also freeze or dehydrate their tomatoes to use later in the year.

I don't like to let them go to waste either. I peel them and cut into small bite size pieces. I put them in a ziploc freezer bag or a small plastic container and just pop them into the freezer. It is so nice to just thaw them, drain the excess liquid if you want and put them into stew, chili, goulash in the middle of the winter. If you have Romas (pear shaped), Cherry tomatoes or small end of the season tomatoes, I just wash these, put them in a ziploc bag whole and put it in the freezer. When you are ready to use them, run hot water over them, still frozen and the skin pops right off. Some people however don't mind the skin so you can skip this step. I have been doing it for years and it has worked well for me.
