Even more tomatoes!

I used 8 tomatoes to make sauce for lasagna the other night. I cooked another 12 down into some sauce and froze it. Now I have another 12 or so that I have to use up again. I tried to get my sister to come back to the house last night and pick some, but she was too tired. I guess I will have to make more sauce today out of some of them. What is your favorite dish that calls for tomato?

I found this recipe this morning, you may want to try it, it sounds good to me. I wonder if it freezes well.
Fresh Tomato Pie
Prep Time: 20 minutes
Cook Time: 25 minutes
Ingredients:
• 4 beefsteak tomatoes, sliced
• 1/2 cup chopped green onion
• 9 inch pie shell
• 3/4 cup mayonnaise
• 1-1/2 cups shredded Cheddar cheese
• 1/2 cup grated Parmesan cheese
• 1/4 cup chopped fresh basil leaves
• Salt and pepper to taste
Preparation:
Preheat oven to 375 degrees F. Layer tomatoes and green onion in bottom of unbaked pie shell. In medium bowl, combine mayonnaise with cheeses, basil, and salt and pepper to taste; mix well. Gently place dollops of the mayonnaise mixture over the tomatoes and spread to cover as much as possible. Bake at 375 degrees F for 20-30 minutes or until pie crust is golden brown and mayonnaise mixture starts to brown. Serves 6
