| |  I like making double stuffed potatos. I is the best of both worlds. You partially cook a whole potato after poking holes in it. Then cut it in half and scoop out the insides. Fix the insides like you would for mashed potatoes and then put back into the shell and bake a little longer until golden brown. You can add cheese if you want.

| | Cook it about 20 minutes. You want to bake it enough that you can scoop out the insides but not rip the skin. I usually test it by sticking a knife into it. I want it to go in but have to force it a little. This is compared to when I'm just baking a potato and I want th knife to go in easily. | | | |
