New twist on pork?

We have pork quite frequently. Actually it's one of the more inexpensive meals I can buy, so we have it at least once a week. I buy a large pork loin for about $20 and we get 3 dinners out of it... which is saying something since we're a family of 7. With this large loin I usually either bake a pork roast, or slice it into chops. Sometimes I will make pulled bbq pork sandwiches. I've got a bunch of different roast and chops recipes... but I'm a bit tired of them all. I'm looking for some new ideas.
Do you have any good pork ideas? Maybe a pork casserole type of thing or something?

I guess with pulled pork, you could make a casserole that would be pretty much along the line of what you would use for a tuna casserole.
I've been keeping an eye on the small pork roasts they have at work. I saw a few of them go through my register line that were about $3.50 each. That's the size roast I would get since there is only me to cook for. I don't need a big one!

My hubby won't eat the tuna casserole type thing. He's so very picky. When I make tuna casserole I have to get him a seperate dinner, so it's not something I do often.

Well, this wouldn't be tuna casserole. It would be Pork casserole!!
