I think they are looking at the "regularness" of the bone structure of the skeleton.
Now, pebbles in Egypt's case was in part because they wanted the body to look as normal as possible so they inserted the stones in the eye scockets to keep them from being sunken.

Actually, mostly in forensics I would have thought, as the police have a reason for wanting to know what a murder victim looked like when there is nothing but bare bones left but it's not really important for archaeologists unless they are preparing for an exhibition of some kind.
