What vegetables with chicken and rice?  | | Hi everybody!
Thursday, I'll have some friends visiting for dinner. I want to cook something nice and, yet no special occasion, so I thought about chicken, cut in small pieces (so they'll bake more quickly)and rice. Now I was wondering what vegetables to put with them. I thought about pine-apple (okay, not really vegetable, but I ate it once and it's nice), but maybe that's too sweet. So I want to stir-fry some other vegetables, but which may go nicely with the chicken?

| | 2. lologirl2021 (1627) | 10 months ago | A great idea that i do with chicken breats is i cut them in cubes then fry them in a pan while im also cutting up peppers, potatoes, mushrooms or anything that i might have in the fridge whatever is available and i add that all in with the chicken. Dont forget to add salt, pepper and of course garlic. Then boil noodles that you would like and when the noodles are done throw them into your pan that you have eveything else cooked in and now you have a delicious stir fried chicken dinner. Its easy and not very expensive and it will taste delicious. Its just another idea that you can have for cooking chicken. Hope this helps you out.

eVoLi89 (124) | 10 months ago | Yeah, I also cut the chicken in cubes, frie them, in the mean time I cook rice, frie that as well, I was looking for some vegetables to add, and I think I'll do peppers and onion, maybe some carrots as well. I like to mix everything in one pan at the end, so everything can absorb all the tastes:-)

Since you are doing chicken and rice, I am wondering if you might want to try this raving Asian recipe called the Hainanese Chicken Rice. It is very popular with the Chinese in Asia and as you will see in the recipe how a Chicken can be made to complete a meal.
Ingredients for Chicken:
* 1 Chicken * 8 cloves Garlic, lightly smashed with skin intact * 5 slices Ginger * 2 teaspoons of Salt * Water (1 pot for boiling and another pot with ice for dipping)
How to do it:
1. Stuff garlic and ginger in chicken and seal with toothpick. 2. Blanch the chicken. 3. Boil a pot of water and add salt. 4. Simmer the chicken for about 20 - 25 minutes or till cooked. 5. Retain broth for use on rice, chilli sauce and soup. 6. Plunge chicken in ice water for about 15 minutes or till chicken is no longer hot. 7. Remove the chicken from the cold water and drip dry. 8. Cut chicken into pieces.
Ingredients for Rice:
* 3 cup Long Grain Rice, * Broth from cooking chicken * 4 slices Ginger * 5 glove Garlic, lightly smashed with skin intact * 8 Pandan leaves, tied in a knot * Salt to taste
How to do it:
1. In a wok, add 2 teaspoons oil, preferably oil from frying chicken skin or the congealed fats you get when you refrigerate your chicken broth. Otherwise, vegetable oil is fine. 2. Saute ginger and garlic till fragrant. 3. Add in washed rice and saute till rice is coated well with the oil. 4. Add salt to taste (about 1 teaspoon is enough). 5. Stir to mix well. 6. Pour rice with ginger and garlic to your rice cooker. 7. Add in broth from chicken you cooked earlier instead of your usual water. 8. Add in the pandan leaves. 9. Let your rice cooker do the cooking.
Now, how can you not eat Chicken Rice without the Chicken Rice Chilli?!! You are missing one of the essences of eating Chicken Rice! Well, unless you are like me. I'm one of the rare breed of Singaporeans who can't take spicy food. Then again, one should not spoil the recipe by not considering what others might prefer and like. So in all fairness we should never neglect this sauce.
Ingredients:
* 3 Chillies, top and seeds removed * 1 slice Ginger * 4 cloves of Garlic, skin removed * Juice of 3 squeezed limes or 1 lemon * 5 tablespoons of chicken broth
How to do it:
1. Blend all ingredients together in a blender, till smooth. 2. That's all!
Note:
* Add more chillies if you prefer it to be more spicy. * Add less broth if you prefer it to be thicker. * Besides the chilli you may also add another sauce dish of thick Chinese dark soy sauce as a dip for your chicken. * Serve the chicken with a dash of Chinese sesame oil and light soy sauce.
You may want to add boiled fresh lettuce or Chinese broccoli (kai lan) with a dash of light soy sauce and oyster sauce for greens to accompany this meal.
