Hi Che, crush some garlic, add it in 1 or 2 tbsps. of yogurt and mix it in the salad. In response to your last discussion, garlic is very good for people with high cholesterol as it cuts it. Your hubby can have 2 cloves of garlic with a glass of water everyday in the morning. I've seen my nephew, who was having high cholesterol, he visited me 2 months back. He stopped eating red meat(goat, lamb meat, beef etc.), minimised consumption of carbohydrates. These are the few precautions he took which I remember.

Hi Che, I have my own version of this Iceberg Lettuce & Sweet Corn Salad.
Shred or cut the lettuce leaves (not so fine, maybe half size of the way you cut them in your salad, so it's smaller); combine it with the sweet corn kernels. Set aside in the fridge. Before the meal, microwave enough amount of low-fat/low sodium butter until melted. This will serve as the dressing. Put the dressing while it is still warm. Mix salad with bacon crisps (fat drained). Season the salad with salt as needed and ground black pepper.
It might not sound healthy but the choice of butter and draining fat from the bacon will make a big difference. This is simple and yummy.

I would add a leafy green salad ingredient such as arugula or spinach. Iceberg lettuce is the least healthy salad green. The greener the lettuce the better. You could also add Boston lettuce, raddicio, water cress, leaf lettuce or curly endive. Apart from that your salad has already calories from the egg and corn. You could add green onions or finely chopped shallots and cucumber. You definmitely should use low fat or no fat dressings and unless the salad is the total meal don't pile on the calories and fat with chicken, other meat or cheese. If you do that the salad is no longer especially healthy.

I like just about anything in salad. I would also add shreeded cheese to yours, some croutons, and top it off with Thousand Islands dressing. good thing my husband and I are going shopping tomorrow. Now you have made me hungry for a salad. I'll put salad stuff on the shopping list.

I think that I would add cucumbers and cheese, maybe some bacon bits, and green peppers. I'd make sure the lettuce was iceberg though as I like that lettuce the best! Your salad looks good, but I'm not too much of a fan of eggs on my salad!

Hey checapricorn! Your salad sounds good to me! I would add
whatever I had in the refrigerator at the time! If I had
some turkey or ham coldcuts I would throw that in too. And
I would add whatever kind of cheese I had too! I love having
salads like that in the summer! It makes such a nice quick
and cool meal!

It looks pretty good. I'd leave out the pepper and the corn though. Then I'd add tomatoes, cucumbers, garlic crutons, bacon and small cubes of chedder cheese.

I like adding a lot of different things to my salads. I have add corn, black beans and rice to mine sometime. yesterday I added olives, and some warmed up small butter beans. Some times I add sunflower seeds, almonds and other seeds. The thing about salad is you can add any thing to them. i don't add fruits because I don't like them in salads or with my meats. I'm not much on cheese unless it's melted in something so I wouldn't put any in my salads.

Right now, nothing. I can't eat it.
But if I could eat anything, I'd be adding some cheese, some olives, maybe some kidney beans...
