Do you have your own recipe for meatballs?

Everyone loves meatbalss. In families with small children you know for sure that if you make them there will be no trouble at diner time. Do you have your special recipe for them? Tell us your secrets. I love to cook and I make additions to mine. Somtimes I fry mushrooms and cut them in very small pieces; sometimes I cook swet pepper and add it to the meat.How about you? I use a meatball recipe that has oatmeal in it instead of the usual bread or breadcrumbs. I also like to form the meatball around a small cube of pepperjack cheese. The last time I made them I baked them in a sauce of pureed chili and tomato soup mixed with cumin and chipotle chilis. They came out great. Meatballs are wonderful in that you can change them so easily by altering the choice of meat, and ingredients.

I cna´t wait to try your ideas!!! I´m not going to wait for more responses to give you best response. Oatmael tastes wonderful and has a lot more fiber than bread crumbs. And the cheese inside makes my mouth melt. I love hot sauces. Thanks for shareing

Thank you so much for the best response! When I do the meatballs, I usually use about 1.5 Lbs ground hamburger/turkey, 3/4 cup of quick-cook oatmeal and 1/2 cup of milk (although you can use water or broth too). The oatmeal acts as a good binder, so I don't use eggs. Makes a good size batch, enough for the new-found family members when they bring the inheritance check...lol.

i love meatballs but very seldom ever make them. i basically make them like i would a meatloaf.
