of homemade potato salad? At home I have to make 3 types of potato salad when All my people come for a party. There´s the no mayo, potato and parsley, oil, lemon and salt potato salad. There´s the potato, cooked diced carrot, cooked pea, mayo potato sald. And I make motrre of the one I like best: the potato, dill pickle, homemade mayo potato salad. What is yours? Do you make your own mayo or you just use the sotre bought one? Please share.

you are a better host than me. lol. i fix potato salad , one kind & that's it. lol. i put olives,onions,boiled eggs in mine. i use store bought mayo. u are smart to make your own. i haven't made any homemade mayo in years. don't have as much company as i use to.

It´s not that I´m such a good host, friend. It´s that my grandchidren are picky. I can give anything I cook to my friends and they will love it. With the kids I had to make a deal: at least a bite before you pronounce it unedible.

Oh, there you are! I thought you left us for good. Thanks for sending me a friends request. My potato salad recipe is basically the same all the time. I mash my potatoes, add chopped onion, dill pickles, boiled eggs, celery salt and just a bit if dill weed, some mayo and mustard. Some times I leave out the eggs, celery salt or dill, but always I use mayo, mustard, pickles and onions. My mother made it with the same ingredients but she boiled the potatoes whole, let them cool and chopped them into small pieced before adding the other ingredients. Your recipe for the one with carrots and peas sounds good. I'll have to try that one. I love making potato salad because it is good cold and I can make it and have it for several meals.

Hi friend, I got kicked out of mylot for not showing due respect to a very rude young lady. I love potatoes in any way. Even when I have a cold cooked potato that has seen better times, I slice it, put cheese and dry oregano (and if I have it a black olive, or ham or whatever) and recycle it as a sort of small pizza. Hug

Some one's looking for a potato salad recipe to go with the meatballs? Hmmmmm..that sounds good! For my potato salad, I use the baby, new-skin potatoes, usually the red ones. I like the color and love that I don't have to peel them. I cut them into half-inch pieces then simmer them until they are tender, but still firm. I immediately run them under cold water to stop the cooking process, then refrigerate until cold. While the potatoes are in the refrigerator, I take onion, red & green pepper, celery and a bit of carrot and rough-chop it in my food processor. I put that mix into a bowl and salt it, then add a small amount of mayonaise and blend well. I let that sit at room temperature until the potatoes are cold. The salt draws the water out of the veggies and blends those flavors nicely with the mayo. Once the potatoes are cold I blend the veggies in with it. The potatoes absorb the salted veggie water and really taste great. I sometimes serve them like that, other times I add more mayo and a bit of mustard and parsley or cilantro.

My favorite potato salad is plain old mustard potato salad. It's basically the same ingredients as some have listed, but with more mustard. The main stuff... boiled eggs, chopped onions, chopped dill pickles, a little bit of paprika and a tiny bit of mayonaise then lots of mustard!!!
