| | I try to but in this area it can be expensive for a few good pieces. I usually buy it when it is on sale and freeze it. I try to grill it so that it isn't sitting in grease or butter but it can break easily if you are cooking pieces instead of a whole fish. the catfish nuggets are the best when they are cooked with a little bit of butter and some fresh garlic. | | | | | | |

| | Fish is so good that any way you cook it, it ill be wonderful. Two days ago I made some salmon for a friend who only eats veggies and fish. I salted and peppered it, squeezed some lemon juice and set it in a bed or onions. A bit of oil and to my little electric oven. It was done in minutes. If you like it juicier, you put foil over it. | | | |

| | I usually buy a special mix of spices for fish curry when I am on holiday in Asia. Maybe your local Asian shop could help or you could try a Garam Masala mix. I lightly fry onions with olive oil in a wide pan then add one or two tins of crushed tomatoes, green and red peppers with maybe some broccoli before adding spices. When simmering nicely I lay the fish, cut in roughly 1 and a half inch squares, on the top and press down gently so that they are just covered by the mixture. I then cook a further 4 to five minutes. Sometimes depending on the spice mix I have used I will add some desiccated coconut or a tin of coconut milk. I don't use a recipe when cooking but just use what ingredients I have available and experiment with different spices so it is difficult to really give exact instructions. Living in Oklahoma, I find that the fish that is available in grocery stores is not as fresh as it could be, in fact I can frequently smell the fish the moment I step foot into the store. A definite turn-off. When I do buy fish, I usually buy product that is flash-frozen. At lest as it thaws it smells fresh. | | | | | | |

| | As a matter of fact we do eat alot of fish. My husband has a friend that brings us fresh salmon and pan fish when he goes fishing. We started eating more fish about 3 years ago whe my husband had a massive heart attack at the age of 47 and wasn't expected to live. He had to end up getting a heart transplant which we thank God everyday for. So we do watch what we eat more now than we use to, becasue we are more educated now on the good food and not so much the bad food. We do slip off to McDonald's or Burger King once in awhile for a burger and they really taste good because that is the only time we eat any red meat anymore. flutterby | | | | | | |
