Soymilk is somewhat similar to milk, but it doesn't taste the same. Soymilk tends to have a slightly sweet flavor, and some brands also have a bit of a vegetable-ish aftertaste. So far, the best-tasting brand I have tried is 8th Continent. It has very little aftertaste and a really smooth consistency.
I have cooked with soymilk. It is good in some things, but not for others. I wouldn't recommend it for mashed potatoes or anything that is supposed to be entirely savory. It is good for sweet things, though. I've used it in baking as well and it usually turns out just fine.

I don't think soy milk tastes like real milk at all. Different brands are better than others. I have drank it a few times, the first two times I didn't really like it, and the 3rd time I tried a different brand and it was tolerable. I don't think I could drink a lot of it though. I believe it was the Silk brand that was the good one. As for cooking apparently it cooks the same as regular milk and you use the same measurements. I have never personally cooked with it though. I enjoy soy milk and especially the vanilla soy. I have not cooked with it at all but put it into my coffee and it tastes great. It's much better for you than regular milk and it also helps with milk allergies too.
