Homemade carrot cake.

I bake a lovely carrot cake, not the American type with icing on, just a very moist carrot cake. I add grated orange and juice to it but for a change I would like to add something else but can't really think of what to put in apart from things like cinnamon and ginger. I want a change from orange but want to use something which will keep it equally moist. Anyone got any ideas?

Besides applesauce which is good in carrot cake, we also tried Applebutter. All I can say is try it. The added flavor with the moistness it adds, tastes wonderful.

Now I love to cook and have made several kinds of carrot cake. You can make it with adding raisins. You add about a cup of raisins if you like a bunch of them half a cup if you only want a bit of them. Now I have made it with the raisins and walnuts and shavings of carrot. Not much of the carrot shavings. I mean very finely thin carrot shavings. This is about a handful. About a quarter of a cup. Now you can put in about 3/4 of a cup of walnuts that have been chopped nice or pecans and add them to your cake. Now instead of making a thick frosting you can make a glaze instead out of confectioner sugar and maple sugar and melted butter. Hope this helps.

hi dear, that is my style, just what i like and the way i bake. exactly means exactly. i also love the moist type nad i always bake the moist one by grating. the recipe of this was told to me by the wife of my general manager. when i use to work , and that is before marriage. it is quite a long time back. and after that i ahve baked it more than hundred times because it is loved by everyone. i dont even find it difficult.

Hello aweins, for some reason I never associated carrot cake with India, is it a traditional thing? I have baked nothing for the last two months which is unlike me but the tempreture is so extreme this year that it's just too hot to do it, I expect I'll resume in September. I had lots of cakes I'd baked earlier to start with, and then frozen. I find the carrot cake much easier now as I get my son to do the labourious bit of grating carrots.
