Quotes from Car Insruance companies - do they change?

I am int he process of changing our car insurance. Our current policy increased by about $150, not a huge deal but honestly, I don't want to pay it. I checked out other companies: Geico, State Farm, All State, Progressive. All were cheaper (at least $100) than our current company. I started of comparing apple to apples, then changed some infomration: increased the deductible, got rid of medical payments, increased property damage, and increase the amount we get per day for a rental car. I kept everything else the same, mileage driven, any violations, etc. Geico came out a lot cheaper. I called our current company today and told them what I found (hoping they'd try to meet it...) and the lady told me that even if you give your drivers license number and are 100% honest, the rate could change. Now, I have gotten insurance quotes online before and they have never changed. Has anyone had this happen to them?
