Gluten free macaroni and cheese from Leahey's Gardens is the BEST vegan mac and cheese. I am not vegan, my daughter is trying to do it still, but I have to be honest it was SO Much better than the regular mac n cheese! I didn't feel as full after wards or sick!! :) I kind of wish we had kept some for leftovers, but it was just sooo good! lol.

That's so wonderful. I love when I find a new, healthy alternative to an old junk-food-ish favorite.

I found it was easiest to just jump into the transition. I've never found replacements for a lot of things (pancakes for example, which I know there are vegan versions of, but I won't eat them... I'll try a new one, but so far nothing impressed me). But I just don't really worry about replacing everything. I've found so many new foods from being vegan that to me it's better than my diet before for sure. About 11 years ago I went vegetarian, and 1 year after that I decided to cut out all animal products. It's definitely worth it, I feel so much better.

My daughter does as well. Her plan for the transition from vegetarian to vegan is to no longer eat the "real" foods she found replacements for. Since she's found a mac n cheese replacement, from now on, it'll only be the vegan Leahey's Gardens mac n cheese :)

sounds interesting, but i thought vegans didn't eat anything that came from animals. they only eat veggies, pasta etc. but then i don't know much about vegans.

There are fake versions of dairy and meat products. This is one of them! :) It isn't real cheese.

Sounds good. I had Mac & Cheese from Trader Joe's one time, and I thought that stuff was really good. I don't like the regular Mac 'n Cheese because I do feel sick afterwards, that and I don't like the taste of it.

I can't even believe that they have good vegan Mac and Cheese. I may have to try some. I've never really had great vegan cheese still. 10 years ago vegan cheese was absolutely disgusting. Now some of it is tolerable. But still, none I've found has been great, or even that good really.
