Oldies and New Orleans

I have found that I asociate many places with some sort of music. New Orleans, besides the beauty of Jazz is for me the song Jambalaya, sung by Brenda Lee. I´m the right age to have been mesmerized by one of the most beautiful voices of the 50s and 60s. Yesterday, after listening to Jambalaya, I clicked to get the lyrics. There is a verse that has to do with New Orleans food. I understood only part of it. Could any of you help me. Here it goes Jambalaya and a crawfish pie and file' gumbo I got "crawfish pie" but the rest escapes me. As I loved New Orleans the two times I visited (before the Katrina)and I love oldies, Brenda Lee, Jambalaya and cooking, understanding that verse became a must. DO HELP! Dictionaries were of no use. Love that song! Even though I don't remember Brenda Lee doing it, it's been done by quite a few people. It was written by Hank Williams Sr, and I believe Hank Willms Jr also sang it. I know the answers for you, too. Jambalaya is a Creole dish with Spanish and French influence. It is dish with meat and or fish, vegetables, rice and is finished with a spicy, hot sauce. If you've been in Louisiana, you must have had some during your time there, right? File' gumbo is fillet gumbo, or fish stew. It's a stew with a spicy, thick sauce, fish fillets (probably shellfish too) and the vegetable 'trinity' of celery, bell peppers and onion. Okra is also a key ingredient and adds flavor as well as being a thickener. Makes you want to head back there for dinner, doesn't it?

Thanks a lot. Although I couldn´t wait for answers and I went to search at my freerice site. I got recipes and the history of the dishes. It was awesome. I sent the whole package immediatly to the first friend I had when I was little. She is living now at the US but we msn or phone each other daily. We have been friends since we were 10 and went to the same parties at that time. She is having problems with her English so I told her that she could learn better getting lyrics from oldies. By the way, the sites with the recipes had beautiful photos of the dishes.It seems that many of the dishes in the song included shrimp. I liked specially a part of the history of the dish where it said it used to include alligators among the wild game! OMG!!! I´m doing to give it a go if I can get the ingredients (NOT the alligator). I might have it when I invite my friends to paint my living and dining room. I can cook but I cannot paint as my shoulder is a mess. As I´m frugal, I´m saving all those paper clothes they give at hospitals for exams. I´ll give them to my friends for the painting. But that will be after my shoulder surgery, the theraphy after surgery and a vacation to forget it all. Take care.

Shrimp, crawfish (crawdads) and alligator would all figure prominently in Creole cooking. I don't mind the shrimp, but the crayfish and alligator I can do without. I did try alligator once, and found it tough and flavorless. I'd substitute chicken in recipes that call for it.

I don´t mind crawfish, cadla. I like it. I just saw the tranlation to Spanish. I´m glad though that I could not get an alligator here except by stealing it from the zoo.

Thanks Elic. I did just that a little after I posted this and got the recipes and even sent them to my best friend from those days full of rock and parties.
