OOOh, carrot cake sounds good tonight, but I always put cream cheese frosting on it. My recipe has crushed pineapple in it as well. My hubby would enjoy that.

I love carrot cake also and you're right GG it needs cream cheese frosting on top or its just NOT a great carrot cake!!

Ok, now I see the picture you posted of a strawberry creme cake and I'm drooling over it now. Strawberry shortcake is very simple, not too filling after a big meal and most everyone will like it. Very good one in my books.

I also worked there a while ago before I hurt my back. I once did a tasting and The rep from Bacardi brought us some rhum cake.....mmmm, now that was SO delicious, I kept eating cake all the time. We asked for the recipe but they refused to give it.

I was watching Country Cooks on PBS and they showed a red velvet cake. I had never seen a RED cake and it looked delicious. I forgot about that!!

Ive never heard of a rainbow cake.....will google it......yeah it should look great under the influence of.......yeah I know. Planning on celebrating haha!!

I googled "three-tier courting cake" and found it was like wedding cakes with 3 or more cakes....woah!! Not sure Id be able to manage one of those. Then I googled "victoria sandwich" oh yes this sounds more like something I could do.

Excellent! You have probably realised through googling that the Victoria Sandwich forms the basis of many a decent cake lol. That's the beauty of it. You can add whatever you like to the mix, anything from lemon drizzle with whisky, coconut or chocolate. Have fun! I'm sure you will!

Well, I got that particular recipe sent to me by my Aunty many, many years ago. With it being on a piece of paper I eventually lost it, unfortunately. The whisky did involve one of those little bottles, I remember that much...and no, I didn't swig any first!

Yes I think it is stressful for him now. Leaving all his friends behind and now he'll be stuck with me only haha!! I'll make it as easy as possible for him. Ive tried IGA's cake before but the one near where I live doesnt live up to expectations Im afraid. So it'll be me in the kitchen sweating over making one from scratch.....but I dont mind.

You put into words exactly how I feel. I want to make it special to let him know that Im here to support him because I'll go through the trouble of baking one instead of buying one. And you're right, he is ending a 35 yr career but not the end of everything else. Thats why I want to make it special, something Ive never baked before.
