Have you ever had chevre, a kind of cheese?  

There are maybe 40 different goat cheeses in my country, some are fresh, like the one you are talking about, and some are hard like a rock ! It depends of the maturing, and I prefer them when they are soft like a Brie, natural or 'cendré', i.e. covered with a fine layer of wood ashes that gives a light taste of smoke to the cheese. It is one of my favorite cheese, and I hope that you liked it .
