Help with my over sugared Ratatouille!

Okay, so I am on a very tight budget. I made a job load of ratataouille for my slow cooker, it tasted good but needed herbs so I opened up my herb pot and shook. The lid came off and all the herbs went in. Mixed italian herbs they were, and there was a lot of them.
I guess I should have fished them out as best I could but no...
I added some sugar to mask the taste a bit. But I added too much sugar and now I have what can only be descrobed as Sweet and Sour Vegetables.
It is not unpleasant and I can't afford to throw it away.
Is there anyone out there that can suggest a way to make this less sugary but not so salty it is inedible....
Needless to say I don't fancy my chances just randomly adding things and hoping for the best....

You could either add something like a whole case of tinned tomatoes or boil it up with some vinegar (and maybe chilli added) and call it chutney.
Throwing it out is really the best option when something goes wrong!
