My daughter, age 13 years, is a vegan/vegatarian. She is also lactose intolerant. As she is a competitive swimmer, she needs a lot of protein supplements. They have to be soy based. Most of the protein powders do not taste good in a drink, but the she would like to try protein bars.
Would anyone have a recipe for a protein bar, using vanilla flavoured soy protein powder?
I would really appreciate it.

I used to make my own protein bars for a while. I cannot remember the exact proportions, but this is what I put in them. Protein powder, sunflower seeds, sesame seeds, rasins, peanut butter, honey, or black strap molasses.
Mix all together and put in the freezer for 2 hours, then cut into bars.

This sounds yummy, although I am not sure what black strap molasses are?

I usually eat regular protein bars, but there are recipes for vegetarians that would like soy. I have never made this one, but it seems pretty standard, like all the other bars, here is the link.

Soy Based Protein Bar
3 cups rolled oats
3 tablespoons vital wheat gluten
1 cup trader joe soy protein
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons fructose
1/2 cup pecans or sunflower seeds chopped
3 tablespoons canola oil
1/3 cup chopped dried fruit or raisins
1/2 cup water or apple juice
2 teaspoons vanilla extract
1/2 cup flour, oat or rice flour; as needed to thicken
1 cup or more additional liquid to achieve texture (varies, depending on additions)
Preheat oven to 350 degrees, grease a cookie sheet.

Mix everything but the flour, let it sit a few minutes, then beat with a fork until it begins to thicken. Add enough liquid or flour to make a stiff dough.

Roll or pat out on the cookie sheet, about 1/4 inch thick, cut 20 pieces. Cut with cookie cutter or roll out a rectangle on a greased cookie sheet and separate into 4x5 rectangles for 20 biscuits or bars.

Bake 12 minutes.

The apple juice adds additional carbs, but nice flavor, and some folks enjoy a little cinnamon. If you are NOT vegan, you can beat in some eggs and reduce the water or apple juice for a little better texture and protein.

Try this on for protein bars.

Ingredients:
3/4 cup Unsweetened Dark Chocolate Chips (coffee-flavored is a nice touch)

1 cup Natural Crunchy Peanut Butter (avoid commercial brands)

1-1/3 cup Brown Rice Syrup (one whole 20 oz. bottle)

4 Tbl. Unsweetened Cocoa Powder

1 cup Rolled Oats (NOT instant Oatmeal)

1-1/3 cup Vanilla-flavored Soy Protein Powder

2 tsp. Freeze-Dried Coffee (Use ground espresso if you used regular chocolate)

Mix all ingredients except oats in a microwavable bowl until moderately well mixed. Microwave on high for one minute. Stir. Microwave on high for another minute. Stir.

Spread out rolled oats in a jelly roll pan or glass baking dish. Toast in broiler or toaster oven until browned and until toasted smell is obvious.

Mix toasted oats with other mixture as thoroughly as possible. Spread mixture evenly in a glass baking dish that has been sprayed lightly with cooking spray. Cool in a refrigerator for 30 minutes. Cut into 22 equal bars.

Nutrition Facts for each bar:
Serving Size: 1 Bar (approx. 2.0 oz.)

Calories: 200

Calories from Fat: 58 (29%)

Total Fat: 6g.

Monounsaturated Fat: 5g.

Saturated Fat: <1g.

Total Carbohydrates: 20g.

Sugars: 5g.

Protein: 15g.

3 1/2 cups quick oats
1 1/2 cups powdered non-fat milk
4 scoops low carb chocolate or vanilla protein powder
1 cup sugar-free maple syrup (Cozy Cottage, Cary's or Howard's)
2 egg whites, beaten
1/4 cup orange juice
1 teaspoon vanilla
1/4 c. natural applesauce

Difficulty: Easy
Time Required: 20 Minutes
Here's How:

1- Preheat over to 325 and spray a baking sheetor 9x12 baking dish with non-stick spray. The 9x12 baking dish will yeild thicker bars.

2- Mix oats, powdered milk, and protein powder in bowl and blend well.

3- In separate bowl, combine eggwhites, orange juice, applesauce, and the sugar-free syrup and blend well.

4- Stir liquid mixture into dry ingredients until blended. The consistency will be thick and similar to cookie dough.

5- Spread batter onto pan and bake until edges are crisp and browned.

6- Cut into 10 bars and store in airtight container or freeze.

7- Nutritional Information Per Bar: Calories-157,Carbs-23g, Protein-15g,Fat-.5g,Fiber-4g

The best protein bar recipes I've found are on the WeBeFit.com website. They list the EXACT caloric breakdown (including sugar that most leave out) and you can substitute their whey protein for soy protein. They also include pictures of what every bar looks like when it's finished (something else most other recipes leave out.)
