Italian Turkey and Sundried Tomato Sausage

3 1/2 pounds ground turkey
1/3 cup chopped sundried tomatoes packed in olive oil
1/4 cup white wine
3 tablespoons chopped garlic
2 tablespoons fennel seeds
1 tablespoon freshly ground black pepper
4 teaspoons kosher salt
1 teaspoon red pepper flakes
1 teaspoon sugar
In a large bowl, add the tomatoes, wine, garlic, fennel, black pepper, salt, red pepper, and sugar to the ground turkey, blend thoroughly with your hands. Fry a small patty until done and taste for salt, pepper, and other seasonings.
Stuff into casings and tie into 6-inch links, or leave as bulk.
The sausage will keep for 3 days in the fridge, or 2 months in the freezer.

Hi Abbey, you can get casings from your lcal butcher. If you can'find any you can always make them into patties.

I've been known to use it in my lasagna. Adds a nice bit of zing to it. If you make links out of it, then you can make sausage sandwiches, in a hoggie roll. I also use it in my eggplant parmesan. You can even serve it with your eggs in the morning. The possibilities are endless. Enjoy
