Why do crinkle cut chips (fries) taste so much better than straight cut?

I'm talking about home cooked chips/fries here - not 'potato chips'/crisps or the chips/fries from the chip shop. I'm sure I read the reason somewhere but I cant remember what it was. Maybe you dont think they taste any...
