Get 1 1/3 lbs (600 gram) of fish fillets, as fresh as possible and ensure you get the bones and "bad" parts of the fish. In my restaurant we prefer to use barracuda, king fish or sword fish which are common in the Caribbean....

Does anyone have a recipe for Mahi Mahi? I have never cooked it before. Should you grill it or broil it or do you know a better way? What should I season it with? Thank you.
