How to beat Persephone on Chains of Olympus

I cant seem to beat Persephone on the ending of Chains of Olympus.. Shes keep on regaining her health every time she falls after i attck her using the shield to deflect the attack back at her it seems so endless she just keep on...

for me the storyline, i like the most of god of war anything with nice and strong storyline will always win the race,so did god of war and more interesting is that god of war team gave the same interesting stuff in god of war 2...

Now i just bought this from eb games, and i cant really get into it. Why does everyone like it so much. Now I like halo 2 and all the other games but htis one really doesn't grab me.
