Can you freeze shredded cheese?

We bought a bunch of cheese blocks, and it seems like cheese doesn't shred to well after you defrost it. If we were to shred the cheese before we froze it, would it still come out the same...such as if we had bought already...

Here's another of our favorite recipes: l loaf of frozen bread dough.(thawed out but don't let it rise) 1 package pepperoni 1 8oz package of shredded mozeralla cheese whip 2 eggs, 1 tsp oregano, 1/4 tsp garlic powder...
