What is your favorite way of fixing potatoes?

I love potatoes!! They have a high amount of Vitamin C in them. They have niacin, Vitamin A, Vitamin K, thiamin and riboflavin, magnesium and selinium in them.I love to have alot of them in the winter. I fix soup, baked, fried, oven wedges, salad, hashbrowned, mashed and yes, even raw. Which one of these do you like best?

CE- Oh my, all of these food threads before dinner is ready tonight! Well, I love potatoes and often will microwave one for a quick snack with a bit of cheese sprinkled on top. I love twice baked potatoes, and often get a loaded baked or mashed potatoes when we go out to dinner. Now, a real treat is getting hashbrowns and putting a little sour cream on top of them! (But I also love them smoothered!) I've not had a good potatoe soup in a long time, but I did make a good steak soup last month in the crock pot that had potatoes in them. Now, I've done potatoes before where you slice them into mouth bite wedges and cook them in the oven at a low temperature. You then throughout the baking time baste them with a bit of oil. They are really yummy. Namaste-Anora

Oh, yes. I guess I was thinking of dinner and that is what got me going on potatoes. I love the oven wedges. My daughter fixes them with just the right spices and they are delicious. Have to use the right oil too or they aren't good at all. Thanks dearie.

You are most welcome. I agree about the oil and I use olive oil myself. I haven't tried this dish but I saw it done on a cooking show where you cook squash, potatoes, etc in the oven on parchment paper with various spices. A sot of fall spread, that looked very good!

I like small new potatoes boiled with a sprig of mint and big baked potatoes - cooked for about 8mins in the microwave and then baked in a preheated oven until the skins are crispy. I'm not keen on mashed potato and find hash browns too greasy but i like leek and potato soup. Tiny potatoes straight from the ground, so fresh that you can just rub the skins off are good raw.

I tend to like to microwave them. I even like sweet potatoes done that way.

Yes, it is quick. I still haven't been able to acquire a taste for sweet potatoes.

I am a fan of good ol home mashed potatoes. My grandmother makes the best I have ever had. I think that is because she uses about a half gallon of milk and a pound of butter. They are so creamy and delicious, especially with pork chops. Yummy.
