I invented a new way to have your pumpkin without the pie

I make the filling just as you would for a pie except I add and extra egg, then I cook it like you would a baked custard, we serve it cool or cold with alittle whipped cream, the light kind and we get the wonderful flavor and texture of pumpkin pie without the pie crust which if not good for heart patients.

Thanks for the great idea. I love pumpkin pie but am not crazy about the crust. I am going to try this for the holidays.

Just make sure you give it enough time to cook, and place it in water as it bakes. at 350 it takes about 2 hours I put orange zest in for varition

I never added the extra egg, but I do cook the pumpkin pie filling in custard cups. I do it with other things as well. The crust is the part that makes us fat.

The only problem is I make a large one of these puddings and it takes a long time to cook. The smell drives us crazy before we can eat it.

That's a good idea kind of a combination of a flan or a crustless quiche made with pumpkin, sounds really good.
