What kind of coating do you like to put on things for frying?

I did oven fried chicken. I put a coating of egg and milk, then dipped them in unsalted whole grain matzo meal, corn meal, whole wheat flour, Italian spices, garlic, and paprica. The first two came out good. But the second two came out better. I took them out of the oil, left then in a dry pan, and shut off the oven. After we finished the first couple, I tried the second ones. Really nice and crisp. I like trying different coatings. What do you put on yours?

The breading I use depends on what I am frying, sauteeing, or even oven baking. The simplest is seasoned flour. Sometimes I use flour mixed with cornmeal, again seasoned. I may add some wheatgerm in a chicken recipe I use. Flour, egg, and bread crumb is a standard in breading recipes. I have used whole wheat flour in breading, but have not yet tried whole grain matzo meal; it sounds great. I do also season all of my breadings, from simple salt and pepper to the herbs you mentioned and also some parmesan cheese. Sometimes I double breadings, as in coating twice, for a secure coat! Panko crumbs are touted as the best for breading by most foodies and Food Network chefs.

Panko crumbs are a particular kind of Japanese bread crumbs that are highly touted by foodies. Kikkoman makes a Panko crumb prodct that I have bought. Thanks for your comments!

Hiya writersedge, For frying I usually use breadcrumbs and beaten egg and a little salt for the meat or fish as I buy them fresh usually. Sometimes I put in a little red pepper in powder form and coat the meat in it and then coat it with egg and then breadcrumbs you have to fry it slowy though as it tends to burn quicker at least it does on my Gas Cooker. Sounds really nice that Chicken yummy.

My electric tends to heat and then stop and then heat again so it does tend so soak up oil during the stopped times.

Hiya writersedge, Yes this has happened to me also so I try to fry them a few at a time. I know it´s a bit annoying but I also do that here too I turn the heat up a bit leave them frying for 50 seconds and then turn them over again and then when almost finished again stops them picking up that soggy look. This can apply to thing specially like Fish, Cod and such. With Chicken I slow it down after the first 20 seconds and turn them over and over and turn the gas right down.

Hi, writersedge. I just usually will coat my chicken with regular Pillsbury white flour. I have always wanted to try the Shake n Bake though. I am sure that your fried chicken came out looking and tasting good.

If I remember correctly Shake n Bake also has a lot of sugar in it. It is not my favorite by any means.

We put a mixture of herbs on our meats that we get at our co-op. It is called Spike and it has all the basic favorites in it and are the superior form of each. It is great on porkchops, chicken or fish. Even on hamburgers. It is great! I just use whatever herbs I like and add garlic and pepper to most.

I use self rising flour,egg, and milk for my chicken. My b/f has an amazing recipe where he uses bread crumbs and the flour and milk.

Bisquick has a recipe, I think it has paprika and pepper in it for sure. That would be like the self rising flour.

For oven frying chicken, I use a mixture of flour, cornmeal, salt and sometimes sage, then I put a pat of butter on the top of each piece. It tastes like skillet fried chicken that way.

I have used a recipe from Bisquick in the past to oven fry chicken. I also remember a recipe that involved crushed corn flakes on the chicken, that would make a pretty color I am sure. Probably thirty years ago I had a recipe that called for instant potato flakes on the chicken, and I liked that really well. It would not have salt in it unless you added it.

I grew up with pancake mix fried veggies, so chicken would probably work. The corn flake stuff is crispy and tastes OK. Never had potato flakes. That I have to try. Now the salt thing, depends on which brand you buy of potato flakes. I've run into a brand or two that do add salt or some kind of sodium, but the ones I like don't have either in them. So will have to try those potato flakes.

I like to experiment with different things each time but, it does make it hard to remember what your receipe is. One thing most people dont think of using is french fried onions (The little crunchy things from green bean casserole) its really good but then again...... I love those things on lots of stuff burgers, salads, and sandwiches

I usually don't put any coatings on things beyond seasoning before I fry it, just some cooking oil or spray. Though my Mom used to take roundsteak cut it up & dip it into a flour & seasoning mix & fry it. Now that I think about it that would be tasty...

When I fry Chicken I just use flour, salt , pepper, garlic salt, and whatever extra seasonings I have around. I trie it with the eggs before and it never worked for me.

Any flour goes well combined with egg. I normally use rice flour for fish, corn flour for meat.

My mother would use egg, she will soak first the chicken in egg before coating it with rice flour. Infact we had fried chicken for dinner tonight. My mom's recipe taste like KFC, its tasty and crispy.

Hi writersedge i dip my chicken in a paste made up of eggs and cornflour.The chicken comes out to be very crispy after frying.The other way of dipping chicken is dip it in beaten egg and then in a crushed to powder non sugary biscuits.My favorite chicken recipe is marinate chicken with ginger garlic paste, green chilli paste ,salt and tomato ketchup .Dip the chicken in beaten eggs and cornflour.Deep fry in oil till it becomes golden brown.serve with green salad and lemon and sauce.

hi! it depends on that what I am frying! If i fry some pork, I usually put some lemon juice and the rind of it, some onion, in some cases garlic, ginger is a very proper spice for pork, salt of course and some pepper! When i fry chicken meat i also put onion and and some lemon juice, but now rind, and also mushrooms and some pepper and red pepper! that's the way i mostly cook meat meals!
