Afternoon snack

This photo shows one of my yellow zuchinni I picked today from my garden.
This was a snack for me after doing garden/yard work all morning etc.
I sliced it into this slices.
Breaded it in some italian bread crumb mix.
Pan fried in a frying pan of veggie oil till golden brown.
Patted them dry and munched away.
It was such a tasty little snack.
Ever eat squash this way?
What's your fave recipe with any type of zuchinni?
I'll be making bread later this month with a lot of mine I'm sure.

I absolutely LOVE fried zucchini! That is my all 'round favorite way to eat zucchini. I grew up on it. Mom used to make squash fritters, too, but I didn't like them at all. I also like zucchini in tomato sauce and in a variety of Mediterranean recipes. I'm not too fond of it steamed, though. Grilled, with a little olive oil and seasoning, is pretty good, too. But, sliced, breaded and fried is my very favorite way to eat zucchini. It's how I got my kids and stepkids started on eating it.

I plan on adding eggplant to my garden next year.
Actually things do taste just like mom made.
Well my jam tasted better actually.
Sorry mom, I miss ya and love ya but.....

I like zucchini raw. I do not do a lot of frying, but I have eaten it in a kind of stew with fresh tomatoes, onions and beef (stew meat or roast.) I like zucchini just about any way you can fix it.

I like to take a big bunch of yellow squash, slice it up with onions, boil them until they are soft and pretty much the water is boiled away and then put a little oil in it and fry it just until its a little scorched (the scorch makes the onions sweeter.) I can eat a whole LOT of that kind of squash!!!

hi Grandpa Bob lol we had some fixed like that for dinner tonight and it was so good, guess we have a different cook. I had never fixed it like that, always just cooked it but this was so o oo good wow. When we had a garden of our own I used to make zuchinni bread and it was so good to ,better that carrot cake and not so rich either.My only wish was that I could have a second helping but they had run out of it. if the cooks would be more creative like that they would find all of us would eat their cooking. lol

I do that with zuchinni and eggplant. They are wonderful together! I fry them with their skin: it has a better taste.
Many times, when I am making my zuchinni or/and eggplant appetizers, I steal a half of each to fry for me. Usually I do it in the same pan where I made my zuchinni or eggplant caviar (I got the name from an elegant restaurant
). So it´s a price for doing the apetizer (it is a lot of work).

I've never had zucchini this way. I knew some folks who made sandwiches with squash (including zucchini) fried like this...they were vegans...but I never wanted to try their stuff. It didn't look appetizing to me.
My favorite recipe that uses zucchini is Chile Verdi that I got from a friend whose family owned and operated an upscale Mexican restaurant in Utah. It was the first time anyone got me to eat anything with zucchini in it. lol...I didn't used to like to eat any kind of squash in anything. Now I'll add it to stews and such but that Chile Verdi is the best way to eat it...it is to die for!
