Are these cucumbers ready for the compost bin?

I was thinking I'd have a veggie salad of sorts w/ my lunch today. Well I got to slice the cucumbers up from our garden and they are frozen on the inside! I looked and my kids turned the dial on the fridge to the highest level of cold!!!! So now what can I do with these? I hate to not be able to eat them but what else can I do with them besides compost them?

Unfortunately there is nothing that you can do with cucumbers that have been frozen except to get rid of them. After you have frozen them, intentionally or not, once they have thawed, they are mushy in the middle and they are starting to go rotten by this point. I'm so sorry to hear that this happened to you with your cucumbers. I've had similar tragedies happen in my fridge as a result of the children and they never are cheap mistakes.

I hate to waste food too. I would compost them, though. Remembering that although I did not benefit from them, the soil, and next year's garden will.

hi 3SnuggleBunnies I did that once and I thawed them then put them in my blender and added my to Hidden Valley ranch dressing for the topping on my tomato romaine and green pepper salad and it was really so good. wow.
they blended in with the dressing and just added a cucumber flavor that went well with my salad.

You may be able to eat them as soon as they thaw out, but likely they are are going to get really soggy really fast. That is a real shame. Can you at least salvage the outside parts that did not get frozen and maybe grate them off and use them in your salad. It is a shame they got frozen like that. I wish I had more suggestions for you. You could use slices of them to lay over your eyes. The extra cold might feel really good.
