This is something that has baffled me for years. It’s about meat.
People like their steaks pink. It’s common knowledge. Many in fact like their steaks rare, or blue! Just barely sealed by touching the pan, and blood still coming out when it’s cut. To be honest, the thought of this makes me feel sick to my stomach, and I think if someone put this in front of me it may get thrown back in their face.
But then take chicken? Undercooked chicken can be so harmful it can kill. If chicken is the tiniest bit pink it’s like “oh not cooked, back in it goes.!”
How come?
And I don’t want a load of people dictating things to me from Wikipedia and yahoo answers and what not, because I am repeatedly telling other people to look the answers up themselves on google instead of making a discussion about it, but no matter what I read I still can’t come to the ultimate conclusion.
I know all about parasites, and salmonella etc.. but I just don’t understand how red meat raw can be so safe, and fish for that matter, but chicken is such a problem?

I never thought about this but it is interesting. Times to times I enjoy to eat a tartar. I ate tartars of beef and of fishes, but never a tartar of chicken. I never saw raw chicken on a restaurant menu, though I saw raw duck, and googling it, I have found a recipe for a tartar of chicken with walnuts and grapes -- just the good moment to taste it, but I am not sure I am ready for this --. The author says to avoid battery chicken. It is possibly one of the main problem with chicken, and not specific to chicken : there is more risks of diseases when one grows together a large number of animals.

i suppose you have a point.. you generally don't have battery fish, or battery cow.. the way you would a battery chicken.
chciken tartar? now that is crazy. i have never heard of that! i would love to try steak tartar but i just don't have the guts too.. i mean i would try anything once, but the thought of actual raw meat is just too much for me to digest [haha!] lol!

Pink just isn't a good color for chicken, so it isn't the food snobs that have brainwashed us ... it is the fashion police.

Chicks I will give ya that about the chicken
It just does not do it for me with blood running out of a steak, It really gets my back up when I get asked how do I want it cooked
I want it COOKED lol, not that hard but then you get those strange looks
PA as Homer said, " I'm not popular enough to wear pink"

Believe it or not some people are more concerned about how the taste and texture of their meat will turn out during the cooking process than anything that may effect their health. May seem weird, but its true. I have been one of those people. Used to always order my steaks medium rare because I had one well done steak too many disappointments with well done. To me at least there is a huge difference in how each of the meats even if they are both cooked the same. The steak still tastes delicious, while the chicken to me has a gross texture that I don't like in my mouth.

They actually say that it is not good to eat uncooked meat of any kind, but the risks are higher with chicken than with many other animals. I know someone that used to raise chickens, and they said that chickens are filthy animals. I am not convinced that they are any dirtier than any other animal. However, I know that their poo tends to contain more diseases that are harmful to us than many other animals, so perhaps that is the difference ... their immune system and digestive system do not kill many of the bacteria that are harmful to us as it is not harmful to them.

oh i see!
so.. when we cook the meat, we kill the bacteria.. so BECAUSE chicken carry more bacteria, or else have a weaker immune system and cannot kill as many bacteria themselves, we need to cook the chicken more thoroughly to kill the bacteria? where as with steak etc.. a quick flash of the pan probably kills the remainder that the animal didn't fend off itself?
and i agree with you, raw meat of any kind just flashes a sore stomach to me!

I have problem to answer for this question.
I have search information about it but I can't find conclusive information. To shock you a little bit I can say that I eat raw fish sometimes and also raw beef ( we call this dish tatar) But I would never eat raw chicken or uncooked chicken.

yeah i think that was the conclusion i came to. that chicken actually carried more germs on them when they were living and had to be cooked through more to kill them germs in the cooking / heating process.

ohhh yes steal tartar i've heard of that and people eat sushi too! i'm the same ive searched and searched and i've found lots of conflicting reasons as to why other meats can be eating pretty much raw but chicken cannot!
btw - i got your private mail and i will deal with it soon and read that stuff for you, but my internet connection isn't very good and i can only use mylot because it stays logged in, so when i get to work tomorrow i will read it for you :)

I think I know the answer. My partner is a cook but work in different industry ( long story) so I asked him and he said that there is two reasons. First the chicken are examined random by vet ( it mean not every chicken) and every cow and pig is examine ( every one of them). Second chicken meat got more germs than pork or beef.
And thank you that you would like to read my stuff. It means a world to me.
