Whats the most important spices,herbs,flavoring that you are using?

For me I have grown a liking to Chinese cuisine because of its simplicity and the balance in flavor so i have started collect some Chinese spices and made a Chinese 5 spice consisting of cloves,star anise,cinnamon,schezuan pepper,fennel seed and make it to a highly aromatic powder with a wonderful sweet notes. I also like using ginger,shallots,green onion,lemon grass and basically everything asian I wanna try some ingredients not locally available but they rarely pop out. for flavoring i like to use the humble salt, low sodium soy sauce, light soy sauce, patis/fish sauce and suka/vinegar. How about you my fellow myloter what are the spice,herbs,flavoring you like to use?

the best herb that is used is widely used here in India is GINGER yes its medical qualities are enormous especially ginger help to control cold and cough .Ginger is also used while making tea and people order like ginger tea. Hare Krishna Ganesh

Thank you Ganesh44 thats a very informative response about ginger I like the mild spiciness of ginger not that over powering to a dish.

Depends on the dish. Pepper and garlic are my favorites for most things. then I also use bay leaves, silantro, and rosemary.

The closest thing I've used to make Chinese food is prepackaged mix. I did find a Mongolian Stir fry place here that is to die for. You pick your meats, your spices, your vegetables and what you put your food onto (such as rice or pasta). Not a ref link ****www.genghisgrill.com****Not a ref link. For other foods, I like Curry, Kyanne (can't spell it), garlic or a premixed Cajun Seasoning.

in terms of spices, it is suppose to be a garlic.i have plenty in mind but it comes first, follow by chili, pepper, onions, ginger, lemon grass. in terms of flavoring such as the salt comes to mind, lemons, mono-sodium glutamate, soy sauce and vinegar. the food would really taste bland if those contained spices and other ingredients are not contain. i am really use to eat with those spices and other flavoring added.

hmmm mono sodium glutamate ... i already stopped using it, you can attain body(different inter playing tastes like earthyness,sourness,richness,freshness and etc),flavor,and mouthfeel(smooth,grainy,velvety and etc) without that believe me.

Other than salt, which I use rarely and sparingly, the flavouring I use most often is Garlic Pepper. It adds a great subtle flavour to mashed potatoes, burgers and other meat, soups. It's so versatile! Lately since I've started making vegetarian stir fry, I've started to also use Soy Sauce. Spaghetti bolognese, my favourite dish, gets Worcestershire sauce, Tobbasco, Cumin, Parsley, and Chili Powder.

Garlic, to me is the most important! I grow my own..and use it in almost every dish that I cook! It's health benefits are unsurmountable! And it is the one flavouring (really a vegetable from the allium family) that is a cross-over found in ALL cuisines..from French to Asian, Italian to American..it is the one commonality that is used in all of these dishes! Enjoy!

I grow, and supply all my family, each year, upwards of 1000 cloves...and if you appraise yourself of the basic needs, and cautions you should have a good crop and I never fail to appraise myself of all the growing techniques..as there is always something to learn! I do grow a huge garden..!

Mmmmmm, all those herbs and spices sound so YUMMY, I can almost taste them! I have never tasted lemongrass, for I simply havent seen it in any shops here. I have also never had shallots, ( sulking ) ...however, I often wonder whether one can use onions instead??? As for me, I am savoury all the way. I love onions and garlic, for sure...I eat fresh garlic cloves in cooking and raw, no problem :) I also love preparing curry and using fresh coriander, as to me that just freshens the entire dish. I also love onions and cheese and have actually just cooked up a cheese and onion quiche, its cooling as we speak! Savory herbs and spices for me, all the way. Enjoy your day and enjoy the cooking!

Lemon grass and shallots are more common in Asian stores or Asian cooking, yes you can use onion either red or the yellow/white onion. enjoy cooking savory aswell ^^

Ok, so I can use those onionsinstead? That is very good to know, for I have skipped MANY recipes over the years just because I didnt have something to replace shallots :) ..I will remember your advice. I just loaned a beautiful cookery book from the library and its packed with gorgeous recipes and feast dishes. IAt has recipes from China, India, and many more. I love reading it and am looking forward to trying some out. Happy Sunday!

Lol its fine now that you know its okay to use onions instead of the shallots, but If im gonna replace the shallot with onion i prefer the yellow one. Hope you enjoy your cooking and goodluck with the book I hope you find delicious festive dishes but easy to cook . have a great sunday

i use most of the spices that you mentioned like cloves,star anise,cinnamon,pepper,fennel seed, coriander seeds, also cumin powder. Ginger and garlic are mainly used when cooking nonvegetarian foods. i dont use any sorts of sauces like soy, chilli or fish though i wonder if i could use soy sauce, what difference does it make to the dish, can you share your experience

The soy sauce enhances the taste of a dish but it depends what cuisine or dish your using it usually soy sauce,oyster sauce, hoisin sauce, fish sauce and etc are common on Asian and south east Asian cuisine. Basically soy sauce and other sauces i mentioned are flavorings not spices. What spices do is that it enhances/elevates the aroma and the body of a certain dish to make it more palatable and enjoyable.for example ill add a lemon and rosemary to a roast then its expected aroma and body would be bright/zesty(lemon) and earthy(rosemary). Flavoring(the soy sauce) in the other hand adds a contemporary flavor or it creates a significant change in flavor sometimes emphasis a main ingredient.For example im making a Mango mousse I would then add a mango flavoring to emphasize the fresh mango that i used. Same goes with soy sauce i would add it to a stir fry to emphasize its Asian flavor of a noodle,vegetable or a meat and adds depth of taste.

The usual spices and herbs that commonly used with almost all recipes are onions,garlic and ginger. Also black pepper or ground one depends on the recipe. I also use Chinese 5 spice, basil, oregano, olives, laurel leaf and many others.

Olives here are expensive and can create a hole out of my pocket... and it taste weird i cant take it .... I think they are condiments...

garlic, red onions, and red chili, and palm sugar are my favorite ingredients to cook dishes!! palm sugar gives better sweet taste than white sugar, it enriches the flavor of the food as it harmonizes its flavor with the other flavors and aromas in the dish!
